English Summer Cup

Makes 6

Preparation time: 30 minutes (including cooling)
Freezing time: 6 hours


  • 1/4 cup (50 g) superfine sugar
  • 4 tablespoons Pimm’s
  • 1 cup (250 ml) ginger beer (or lemonade)
  • 3/4 cup (150 g) sliced strawberries
  • 1/4 cup (50 g) sliced apples
  • 18 small mint leaves

1. Place the sugar and ½ cup (125 ml) water in a saucepan and slowly bring to a boil, allowing the sugar to dissolve. Let simmer gently for 5 minutes, then remove from the heat.

2. Add the Pimm’s and ginger beer or lemonade. Let cool completely.

3. Divide the strawberries, apple slices, and mint leaves among six popsicle molds. Pour over the Pimm’s mixture and insert the popsicle sticks.

4. Place the molds in the freezer for 6 hours, until frozen solid.
