Southern Fried Chicken With Slaw

Serves 6

Though it needs a while to marinade in the buttermilk, it's actually surprisingly simple to make your own version of this takeaway favourite and is the ideal dish for a summer BBQ. This recipe asks for drumsticks, but you can use whatever cut of chicken you like, although the cooking time will vary slightly.


  • 8 chicken drumsticks, skin removed
  • 250 ml (8 1/2 fl oz/1 cup) of buttermilk
  • 1/4 of a red cabbage, shredded
  • 4 spring onions (scallions), thinly sliced
  • 1 granny smith apple, peeled and grated
  • 2 tablespoons of chopped flat-leaf (Italian) parsley
  • 125 g (41/2 oz/1/2 cup) of sour cream
  • 2 tablespoons of lemon juice
  • Salt and freshly ground black pepper
  • 85 g (3 oz/ 2/3 cup) of cornflour (cornstarch)
  • 2 teaspoons of sweet paprika
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon of ground oregano
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of ground cardamom
  • 2 litres (68 fl oz/8 cups) of vegetable oil
  • Lemon wedges, to serve


  1. Put the chicken in a bowl and cover with the buttermilk. Refrigerate for at least 4 hours or overnight.
  2. Preheat the oven to 180°C (350°F).
  3. Put the chicken in a colander to drain the excess buttermilk.
  4. In a large bowl, combine the cabbage, spring onion, apple and parsley. Mix the sour cream and lemon juice together, and season with salt and freshly ground black pepper. Pour over the salad and toss to combine.
  5. In a shallow bowl, mix the cornflour with the spices and 1 teaspoon of salt. Dip the chicken pieces into the flour mixture, and shake to remove excess flour.
  6. Heat the oil to 180°C (350°F) in a deep, heavy-based saucepan or deep-fryer.
  7. Deep-fry the chicken, in batches, for 6–8 minutes, until golden. Transfer to the oven and bake for 20 minutes.
  8. Serve with lemon wedges and the ’slaw.
