Pea, Edamame & Cashew Soup

Delicious both hot and cold, this green super-soup is full of plant-based protein and healthy fats to keep you satisfied without weighing you down.


  • ½ cup of peas
  • ¼ cup of shelled edamame beans
  • ¼ cup of soaked cashew nuts
  • ½ a cube of vegetable stock


  1. Start by boiling the peas, edamame and stock cube for five minutes in a cup of simmering water.
  2. Once boiled, add the soaked cashew nuts and combine all the ingredients together using a handheld blender (a food processor will also do the job).
  3. Enjoy hot by pouring into your favourite bowl, topped with extra greens and crushed cashews, or let sit in the fridge for a few hours until cool.
