Creamy Roasted Asparagus Soup

This soup boasts a velvety texture and a bold but smooth garlic flavour. It will warm your bones and fill you up, while plenty of good fat and protein provide a good balance for the slightly higher carb content, so your energy remains stable.

Ingredients
2lb of young asparagus, bottoms trimmed
5 cloves of garlic, peeled
30ml of olive oil
1⁄2 tsp of unrefined sea salt
1⁄4 tsp of black pepper
720 ml of chicken broth
14g of butter or ghee
240ml of unsweetened almond milk
Method
Step 1

Preheat the oven to 450°F (232°C).

Step 2

On a baking sheet, toss the asparagus and garlic with the olive oil, salt and pepper. Roast until the asparagus is tender, about 10 minutes.

Step 3

Remove from the oven and put the asparagus and garlic in a blender with the chicken broth, almond milk and butter or ghee. Blend, and when smooth and velvety, transfer to a soup pot. Cook over medium heat until it reaches the boil, about 7 minutes. Adjust the flavour with salt and pepper.

Step 4

Serve with croutons.
