Broccoli & Sugar Snap Peas With Walnut Sauce

When it comes to veggie side dishes, making them interesting isn't always easy. Try this simple yet healthy idea and enjoy your fresh greens with a delicious nutty dressing.

Ingredients
100g of sugar snap peas
½ a head broccoli
1 tbsp of sea salt
1/3 cup of roasted walnuts
2 tbsp of tahini
1.5 tbsp of honey
2 tbsp of soy sauce
1-2 tbsp of water
Method
Step 1

Bring a pan of water to the boil, and add some salt.

Step 2

Cut the broccoli into bite sized florets.

Step 3

Cook the broccoli and sugar snap peas for 2-3 minutes. Keep them crunchy by not over cooking.

Step 4

Cool them down with cold water and drain well.

Step 5

For the sauce, grind the walnuts into a paste with a pestle and mortar.

Step 6

Gradually add the tahini, honey, soy sauce and water.

Step 7

Toss the broccoli and sugar snap peas with the walnut sauce and serve.

TIP: You can use different types of nuts: cashew, peanut or almond for the sauce.
