Covent Garden favourite Christopher’s is serving a dedicated pancake menu from 16th-20th February – and it’s indulgent in all the right ways. Highlights include the Chocolate Lovers Stack (chocolate chips, mousse, ice cream, warm sauce), the Crumbly Stack (blueberry swirl pancakes layered with caramelised apple butter and custard cream) and ricotta soufflé pancakes topped with matcha soft serve and glazed raspberries. On the savoury side, king oyster mushroom and sweetcorn pancakes come finished with truffle, whipped Parmesan and sweet potato crisps – with the option to add blackened shrimp. Pair with a Biscoff Martini or the alcohol-free No-spresso Martini for full dessert-mode energy.

THE COOL COLLAB:

Two British icons have teamed up to turn Pancake Day into latte form. THE AT-HOME HERO:

Buckwheat Pancakes With White Balsamic & Sumac Strawberries, Miso Caramel & Vanilla Chantilly

If you’d rather flip at home, this Milk (Balham) recipe – taken from ORDER UP! – is a proper weekend project. Earthy buckwheat pancakes meet sharp-sweet strawberries (or swap for forced Yorkshire rhubarb), glossy miso caramel and soft vanilla Chantilly. It’s balanced, indulgent and far from average.

INGREDIENTS:

For the strawberries:
 • 500g of strawberries (ideally British)
 • 3 tbsp of caster sugar
 • 2 tbsp of white balsamic vinegar
 • 1 tsp of sumac

For the pancakes:
 • 20g of buckwheat flour
 • 150g of self-raising flour
 • 35g of caster sugar
 • 1 tsp of baking powder
 • 120g of milk
 • 1 egg

For the chantilly cream:
 • 200g of double cream
 • 1 tbsp of icing sugar
 • 2 tsp of vanilla paste

For the miso caramel:
 • 240g of double cream
 • 40g of miso paste
 • 200g of caster sugar
 • 2 tbsp of water
 • 20g of cold butter

For serving (optional):
 • Micro basil or small basil leave

METHOD:

For the strawberries:

  1. Wash and halve the strawberries.
  2. Place in a bowl and toss gently with the sugar, white balsamic and sumac.
  3. Let sit for at least 10 minutes to macerate.

For the pancakes:

  1. In a large bowl, combine the dry ingredients.
  2. In a separate bowl, whisk together the milk and egg.
  3. Pour the wet mixture into the dry and whisk until smooth.
  4. Cover and set aside while you prepare the other elements.

For the chantilly cream:

  1. Combine the double cream, icing sugar and vanilla paste in a bowl.
  2. Whisk until soft peaks form.
  3. Set aside.

For the miso caramel:

  1. In a small pan, gently heat the double cream and miso, whisking until fully dissolved.
  2. In a separate pan, combine the sugar and water. Heat over medium heat, swirling occasionally, until the mixture turns golden brown.
  3. Remove from the heat and slowly whisk in the warm miso cream.
  4. Add the cold butter and whisk until glossy and smooth.

To cook & assemble:

  1. Heat a frying pan over medium heat and add a small cube of butter.
  2. Scoop a quarter of the batter into the pan (an ice-cream scoop works well).
  3. Cook until golden on one side, flip and cook until golden on the other.
  4. Repeat until all pancakes are cooked.
  5. To serve, pour the caramel over the pancakes first so they soak it up, then spoon the cream in the middle and add the strawberries on either side.
  6. Garnish with micro basil or small basil leaves, if using.

Japanese soufflé pancakes are light as air, with that signature wobble that makes them almost too pretty to cut into. Héfaure has built a following for good reason – these are properly fluffy, delicately sweet and made to order. Choose from toppings like Biscoff and caramel, strawberries and cream or matcha – and, if you’re feeling committed to the brand, you can even add tapioca pearls on top. It sounds rogue but it works. Walk-in only, so expect a queue at peak times.

Where The Pancakes Are

For one day only (17th February), pancake aficionados, Where The Pancakes Are, are flipping a British classic into something special. Available at Southwark Quarter and Battersea Power Station, the limited-edition rhubarb & custard stack is piled high with meringue, pistachio and vanilla, and finished with forced Kentish rhubarb from Myatts of Mockbeggar – grown in darkness for that signature blush-pink sweetness. After something more traditional? The fermented buttermilk pancakes are as fluffy as ever – order the signature with maple syrup and butter or lemon and sugar, or lean savoury with The Canadian (Yorkshire streaky bacon, blueberries, maple) or the full English Breakfast stack with sausage, egg and slow-cooked beans. Batter-wise, choose between the classic (high-welfare Cornish eggs, British buttermilk, organic flour) or the three-in-one vegan, gluten-free, protein-loaded option. It’s walk-ins only on 17th February, with extended hours from 7am-10pm. Expect a little entertainment too, courtesy of roaming magician Darryl Rose.

THE PANCAKE DAY RACE:

The Lamb Tavern, Leadenhall Market

Prefer your pancakes with a side of competition? The Lamb Tavern’s annual Pancake Day race returns to Leadenhall Market on 17th February from 11am, bringing a dose of old-school London theatre to the cobbled Victorian arcade. Teams of four (bowler hats mandatory) sprint a 20m relay for glory, a golden frying pan and a Lamb Tavern hamper, while runners-up still walk away with prizes. Spectators are encouraged to line the route early, soak up the atmosphere and secure a pancake fresh off the griddle while cheering on the chaos.

THE BOTTOMLESS OPTION:

Boundary, Shoreditch

Boundary is serving bottomless pancakes for £12 all day, which feels both generous and mildly dangerous in equal measure. You’ll have 90 minutes to make your way through as many stacks as you can manage, so pacing yourself is strongly advised. Toppings include bacon and maple syrup, mixed berries and maple syrup, or caramelised banana and chocolate.
