Step away from the pasta and Dolmio sauce – it’s time to spice up your midweek meals. To give you some inspiration, we’ve compiled some quick, easy and healthy recipes we’ve spotted on TikTok lately.
Smoky & Caramelised Onion Butter Beans
Serves: 2
Total Time: 30 Minutes
INGREDIENTS
- 1 can of butter beans
- 1 red onion
- 100ml of single cream
- 1 tbsp of smoked paprika
- 2 cloves of garlic
- 3 tbsp of tomato puree
- Juice of 1 lemon
- 100ml of white wine (optional)
- Parsley & sourdough, to serve
METHOD
- Start by caramelising your onion, then add your chopped garlic, tomato puree and smoked paprika.
- If you have some open, deglaze the onions with a little bit of wine.
- Pour in a can of butter beans with the liquid, then add the cream and lemon, and let it simmer for about five minutes until your desired consistency. Serve with sourdough or crusty bread.
Spanish Chicken & Chorizo Tray Bake
Serves: 4
Total Time: 1 Hour
INGREDIENTS
- 500g of chicken thighs
- 1 tsp of paprika
- 1 tbsp of mixed herbs
- 2 red onions
- 2 bell peppers
- 1 tbsp of parsley
- 100g of chorizo
- 200g of baby potatoes
- 12 on the vine tomatoes
- Salt & pepper to taste
- A glug of olive oil
METHOD
- To a bowl, add your chicken, a glug of olive oil, paprika, mixed herbs and salt and pepper. Then, set aside to marinate.
- Add in the chopped peppers and onions, baby potatoes, diced chorizo to your tray bake. Season well with more paprika, olive oil, salt and pepper. Give that a really good mix and add your marinated chicken on top.
- Place the tomatoes on top alongside your parsley, place in an oven at 180ºC for 45 minutes. When done, drizzle over some olive oil to serve.
Beef Lettuce Wraps
Serves: 1

INGREDIENTS
- 4 spring onions
- 1 iceberg lettuce
- 400g of beef
- 2 cloves of garlic
- 1 tsp of ginger
- Sprinkle of white pepper
- 1 tbsp of olive oil
- 1 tsp of chilli flakes
- 3 tbsp of hoisin sauce
- 2 tbsp of fish sauce
- 1 tsp of lime juice
- 20g of fresh coriander leaves
- 20g of basil leaves
- Vermicelli noodles, fried shallots and chilli flakes, to serve
METHOD
- First, cut up four spring onions, separating the white part from the green part.
- Carefully peel leaves off the iceberg lettuce, you’ll be using those for the lettuce cups.
- Then to a pan, add a little bit of oil, as well as the white parts of the spring onion. Fry them for about a minute, then add in your beef mince. Then add garlic, ginger, and a little bit of white pepper straight onto the mince.
- Break up all the beef, while stirring add the hoisin and fish sauce. Once the beef is cooked, turn off the heat and add in chilli, lime juice, the green part of the spring onion, as well as some fresh basil and coriander.
- To assemble, get one lettuce leaf, add some vermicelli noodles, as well as your beef mixture, top with more chilli and fried shallots, then wrap it into a little parcel and enjoy.
Firecracker Prawn Stir Fry
Serves: 2

INGREDIENTS
- 330g of king prawns
- ½ onion
- ½ red pepper
- 2 cloves of garlic
- 10g of ginger
- 4 tbsp of soy sauce
- 3 tbsp of sriracha
- 2 tbsp of soft brown sugar
- 80g of spring onions
- Sesame seeds and rice, to serve
METHOD
- Start by cooking the prawns over a high heat until they turn pink. Then remove them from the pan.
- Add in the onion and red pepper and stir fry for a couple of minutes. Chuck in the garlic and ginger and cook for a further minute before pouring in the water, soy sauce, sriracha and soft brown sugar.
- Cook until the sauce thickens, then add the prawns back in along with some spring onions.
- Stir it well, then dish it up with rice and sprinkle over some more spring onions and sesame seeds.
Smashed Lamb Souvlaki Tortillas
Serves: 2

INGREDIENTS
- 400g minced lamb
- 200g of tomatoes
- ½ of cucumber
- 200g of feta
- 50g of parsley
- 2 tbsp of lemon juice
- ½ red onion
- 2 tsp of Italian herbs
- 1 tsp of cumin
- 1 tsp of smoked paprika
- Salt & pepper, to taste
- Tortilla wraps
- Serve with garlic dip
METHOD
- Combine the chopped tomatoes, cucumber, feta, parsley, and lemon juice in a bowl and mix.
- In another bowl, mix the lamb mince, onion, Italian herbs, cumin, smoked paprika, salt, and pepper.
- Spread the lamb mixture onto the tortillas, fry them on each side until golden brown and heated all the way through. Top with garlic dip and the feta salad mix.
