Tucked away in East Sussex, Architects Holiday is a design-led collection of rural escapes created by architects who place experience at the centre of the stay. Set within the woodland surroundings of Great Park Farm, the retreat combines contemporary architecture with simple country pleasures, from long walks across rolling farmland to evenings spent soaking in a wood-fired hot tub. Launching on 1st May, two new properties – Bathers Cabin and Yogis Cabin – will join the site’s award-winning Drying Shed sauna, expanding the growing collection of thoughtfully designed spaces. Each cabin has been conceived around a restorative practice rather than traditional hotel layout, making wellbeing the focus. Yogis Cabin centres on a serene yoga studio framed by large sliding doors that open east to west, capturing changing light throughout the day and views of the surrounding alder trees. Outside, a spring-fed natural swimming pool and handmade wooden soaking bath sit quietly within the woodland and a continuous engawa-style deck, inspired by traditional Japanese architecture, wraps around the building.

The Wild Duck Inn, Cotswolds

Restoring historic buildings with character has become something of a signature for Sam and Georgie Pearman, the duo behind the Country Creatures group. Their latest project, The Wild Duck Inn, sees a 16th-century coaching inn in the Cotswold village of Ewen carefully brought back to life. The Grade II-listed building once served as the gardener’s cottage to nearby Ewen Manor and had fallen into disrepair before the Pearmans began its renovation. Today, the inn blends original features such as low-beamed ceilings, aged wooden floors and open fires with 19 individually designed guest rooms. Georgie has sourced wallpapers and fabrics from British makers including Lewis & Wood and Watts of Westminster, alongside antique finds gathered from markets across the UK. The bar remains the heart of the property, with ales on tap and a wine list curated by head of wine Andrea Domenicucci. In the restaurant, head chef Richard Sandiford (formerly of Hawksmoor of Bistrotheque) focuses on seasonal British cooking, drawing on produce from suppliers such as Wright Bros and Neal’s Yard Dairy. There are also two treatment rooms offering facials and massages with 100 Acres products.

The Vaults At Stow, Cotswolds

In the centre of Stow-on-the-Wold, a former Georgian Revival banking hall has been transformed into an elegant trio of serviced apartments known as The Vaults at Stow. Created by architect and interior design duo Rory and India Hunter, the project blends heritage architecture with quietly luxurious interiors. The three one-bedroom suites – Farthing, Shilling and Tuppence – are designed to feel more like private residences than hotel rooms. Each apartment features a small kitchenette, generous living spaces and a bathroom with antique details such as cast-iron roll-top baths. Two also include private roof terraces overlooking the rooftops of Stow. The Hunters have emphasised local craftsmanship and sustainable design throughout the restoration. Bespoke joinery, engineered oak flooring and British-made Hypnos mattresses sit alongside fabrics and furnishings sourced from respected interiors brands including Soane Britain and Fermoie. Guests also benefit from a concierge-style service that can arrange everything from restaurant reservations to spa treatments and local experiences.

The Bradley Hare Inn, Wiltshire

The Beckford Group is expanding its collection of country pubs with rooms with the reopening of The Bradley Hare Inn in the village of Maiden Bradley. Previously known as the Somerset Arms, the historic property has been carefully redesigned in the group’s familiar style: blending traditional pub character with thoughtful interiors. Today, 12 guest bedrooms sit across the main inn and an adjoining coach house, while downstairs a series of intimate dining spaces and a cosy bar create a relaxed atmosphere for locals and overnight guests. Interiors feature Farrow & Ball paint colours, oak Windsor chairs and framed historic maps by cartographer Robert Morden. Group chef Adam Bristow has created a menu rooted in British produce, with dishes such as Poole Bay clams with bacon, and crackling served with rhubarb sauce appearing alongside classic pub staples. The garden has also been reimagined, with a former skittle alley converted into a small sitting room where guests can enjoy coffee or read the morning papers.

CABÜ By The Lakes, County Cavan

Deep within the forests of Killykeen Forest Park, CABÜ by the Lakes has become one of Ireland’s most quietly appealing woodland retreats. Now the design-led destination is expanding, unveiling 15 new cabins this month as part of a significant upgrade to the site. The new additions include one- and two-bedroom Woodland Cabins alongside a larger three-bedroom Barnhouse with a hot tub, all designed to reflect CABÜ’s slow-living ethos. Timber exteriors and large windows help the cabins sit naturally within the surrounding forest, while interiors prioritise warm materials, natural light and thoughtful details. Guests will also have access to the site’s existing facilities, including the Sitooterie – a relaxed communal gathering space – and the Cabin Club Bar. The Nature Spa remains a highlight, offering sauna sessions, Japanese bathing rituals and treatments designed around rest and recovery. Forest walking trails and a private lake jetty complete the setting, offering an easy route into the surrounding landscape.

Knepp Wilding Kitchen, West Sussex

Over the past two decades, Knepp Estate has become one of the UK’s most influential rewilding projects, transforming 3,500 acres of former farmland into a thriving natural landscape. Its food programme has developed alongside this ecological work, bringing the estate’s produce and philosophy to the table. Now led by head chef Alex Dome, formerly of Petersham Nurseries, the kitchen has just been awarded a coveted Michelin Green Star in recognition of its sustainability-focused approach. Ingredients are sourced directly from the surrounding landscape wherever possible, with the estate’s farm shop and butchery providing much of the produce (its rump roasts are exceptionally generous). For spring 2026, Knepp is also collaborating with Ffern on a fragrance inspired by the estate’s ecology. Drawing on the scent of wild blossom, grasses and herbs found across the rewilded landscape, the project reflects the close relationship between land, plants and seasonal cycles that defines the estate’s wider philosophy.

The Woodcote, Sussex

Set within the rolling hills of the South Downs National Park, The Woodcote is a recently restored restaurant with rooms that places food and hospitality at the centre of the experience. The property combines the warmth of a traditional country inn, with open fires and relaxed communal spaces, with a contemporary menu led by local chef Matt Gillan, known for his appearances on Great British Menu. His dishes focus on seasonal ingredients sourced from nearby farms and producers as well as the pub’s own bees and kitchen garden. Six lovely bedrooms have stylish décor, comfy beds and Wildsmith products in the bathrooms. Phase one is impressive – the tasting menu is hit after hit and the pastries at breakfast are as good as any we’ve tried recently – but we’re excited to learn more about phase two, as the Woodcote team has won planning permission to build a whole new restaurant, set of bedrooms and larger kitchen garden. Until then, you’ll find us in the beer garden over the summer.

Eleanore

Eleanore, Edinburgh

One of our favourite Edinburgh restaurants, Eleanore, has reopened following a refurbishment that marks a shift in direction for owners Roberta Hall McCarron and Shaun McCarron. The relaunch returns the restaurant to a more relaxed neighbourhood bistro style, echoing the spirit of their original venture, The Little Chartroom. The previous tasting menu has been replaced with a flexible à la carte format centred on modern interpretations of classic bistro dishes. Guests will be able to drop in for anything from a quick plate and glass of wine at the bar to a longer evening meal. The frequently changing menu will remain seasonal, with head chef Hamish McNeill leading the kitchen. Dishes could include options such as beef tartare with kale and kohlrabi, and confit duck leg with lentils. Desserts lean towards nostalgic favourites (think sticky toffee profiteroles), while Sundays will feature a dedicated lunch menu built around whole-animal cooking shared across the group’s restaurants.

The Bryntirion Inn, North Wales

Chef Luke Selby was head chef at Le Manoir aux Quat'Saisons for many years. Now, he’s taken on a new role as chef partner of Palé Hall in Wales. The first part of the project is the relaunch of The Bryntirion Inn, a 300-year-old pub on the estate. The inn sits less than ten minutes’ walk from the main hotel and has six guest bedrooms, offering a more informal place for visitors to stay while exploring the surrounding landscapes of Snowdonia. Selby and head chef Ethan Cleary have developed a menu that revisits traditional pub dishes through a more refined lens. Plates such as black pudding Scotch eggs with brown sauce and cod with Jerusalem artichoke and potted shrimps reflect the region’s produce, while desserts highlight seasonal ingredients including forced rhubarb.

The Great Garden Show At The Newt, Somerset

From 9th to 17th May, The Newt in Somerset will host The Great Garden Show, a new nine-day event celebrating horticulture, cultivation and seasonal food across the estate’s gardens. Drawing on its previous collaborations with the RHS Chelsea Flower Show, the estate has created a programme that combines expert talks, practical workshops and garden installations. Visitors will be able to take part in guided tours of the estate’s orchards and ornamental gardens, alongside sessions covering propagation, pruning and soil care. Hands-on workshops will also include foraging walks and natural craft activities such as wreath-making and pressed flower design. Alongside all this, the estate’s restaurants will focus on seasonal farm-to-table menus inspired by ingredients grown across the surrounding farmland.

Ashcombe Estate x Carousel, Wiltshire

This summer, the Wiltshire estate of filmmaker Guy Ritchie will once again host a series of food-focused weekends in collaboration with London restaurant collective Carousel. Running across selected weekends from May to July, the experience invites guests to stay for two nights on the estate, with accommodation in the farmhouse and newly added suites inspired by 19th-century New England shooting lodges. Breakfast is included each morning, while the main event takes place on Saturday evening. Guests will travel by the estate’s gun bus to New Lake, where a guest chef will prepare a multi-course dinner cooked over fire, accompanied by matched wines, beers and cocktails. Throughout the weekend there are also opportunities to take part in workshops led by the Carousel team, alongside outdoor activities including sauna sessions and wild swimming. Having been last year, we can’t recommend it enough. The series runs from May to September.

Relative Ties x Jigsaw, Cambridge

Relative Ties is a new exhibition at Murray Edwards College in Cambridge presented by the Women’s Art Collection that explores the work of four artists from the celebrated Nicholson family across more than a century of creative practice. Bringing together paintings, interior design pieces, fabrics and personal ephemera, the exhibition traces how artistic ideas and influences have passed between generations. The show highlights the work of women within the family, offering insight into their creative processes and the wider artistic environment in which they worked. Visitors will see not only finished artworks but also sketches, tools and design materials that reveal the working lives behind them. Fashion brand Jigsaw has partnered with the exhibition, reflecting its longstanding support of the arts and its focus on craftsmanship and longevity in design. The exhibition runs until 6th September.
