Following the success of its first site in the Mendips, Mad Swans has headed south. Opened on 1st June in the South Downs National Park, the new countryside hangout brings together eco-cabin stays, sport and food in one design-led destination. Just under an hour from London Waterloo, the site has been conceived as a playful antidote to traditional country clubs, with 12-hole golf, padel, pickleball, shuffleboard, darts and driving ranges, all set alongside two restaurants, event spaces and woodland cabins. Founded by Joel Cadbury and Ollie Vigors, the duo behind Beaverbrook and Bel & Dragon, the concept blends elevated hospitality with a more relaxed, sociable atmosphere. Food comes courtesy of chef Steve Rooney, with creative input from multi-Michelin-starred chef Ollie Dabbous.

Arthouse, Glasgow
Opening on 24th June, Arthouse Glasgow is set to become one of the city’s most exciting hotel launches of the year. The first project from new hospitality group Oberland, the 76-bedroom hotel occupies a striking 19th-century townhouse in Glasgow’s cultural quarter. Interiors come courtesy of acclaimed studio A-nrd, balancing warm textures, vintage pieces and understated Scottish craftsmanship across bedrooms and communal spaces. The hotel is designed as much for locals as visitors, with relaxed lounge spaces intended for everything from morning coffees to late-night cocktails. Dining comes from Dean and Anna Parker, the team behind the much-loved restaurant Celentano’s, which will bring the ground floor to life. Bedrooms span four categories, each featuring bespoke king-size beds, Bute Fabrics upholstery, Verden bathroom products and thoughtful details, including Bare Bones Chocolate and in-room cocktail kits.

The Fife Arms, Scotland
The Fife Arms has unveiled a lavish new suite inspired by Gabrielle ‘Coco’ Chanel and her enduring connection to the Scottish Highlands. Hidden behind a trompe-l’œil door and revealed via a trail of camellia motifs, the room draws on Chanel’s years spent in Scotland during the 1920s and her romance with Hugh Grosvenor, the 2nd Duke of Westminster. Designed by Russell Sage Studio, the suite references both Chanel’s Paris apartment and the Highland estates that informed her legendary use of tweed and tailoring. Rich burgundy and forest-green fabrics from the historic textile mill Linton feature throughout, alongside Scottish chinoiserie furniture, Art Deco mirrors and a dramatic wheatsheaf chandelier. The romantic space also includes a freestanding copper bath, a walk-in wardrobe and a dedicated bar area. Elsewhere, the hotel’s much-loved family room has been reimagined on the ground floor, complete with games, books and knitted red squirrels hidden throughout the space.

Unplugged has launched its first-ever coastal cabins, bringing its signature screen-free stays to the Somerset coastline ahead of summer. Set high above Porlock, with uninterrupted sea views, the new off-grid cabins – Barclay and Wilfred – are designed as restorative escapes from modern life, complete with phone lockboxes, log burners, books, games and no wi-fi. Inside, the cabins pair simple Scandinavian-inspired interiors with thoughtful comforts including Piglet in Bed linens, instant cameras and powerful hot showers. Woolley Grange, Somerset
Luxury Family Hotels has completed the latest phase of its restoration of Woolley Grange, the Jacobean manor house just outside Bath. The final stage sees the unveiling of the redesigned walled garden, a collection of new garden-facing bedrooms and a refreshed outdoor pool area ahead of summer. Tucked within the historic grounds, the new Walled Garden Rooms have been designed specifically with families in mind, balancing grown-up spaces with cosy children’s sleeping areas. Interiors take inspiration from the surrounding Wiltshire landscape, with grounding green tones, warm timber finishes and rustic stone textures throughout. Outside, the restored walled garden has been replanted by the hotel’s horticultural team, creating a peaceful extension of the rooms themselves. The heated outdoor pool and lounge area add a new resort-style feel for the warmer months, complementing the hotel’s existing spa, indoor pool and family-focused offering.

West London favourite Canteen is heading to the countryside for summer with a new seasonal residency at The Old Coal Yard in the Cotswolds. Now open, the restaurant team has brought its relaxed Italian cooking to a rural setting, serving fresh pasta, pizzas and changing seasonal dishes from Thursday through Sunday. Executive chef Jess Filbey and head chef Lorenzo Nigro have overseen the menu, with Gozney oven pizzas available throughout the day alongside long outdoor lunches, firepit dinners and weekend live music. Friday evenings are set to feature live performances, while Saturdays will focus on family-friendly games and activities. Unlike the Portobello original, the Cotswolds outpost will take reservations, making it an easy countryside lunch stop-off as much as a destination for dinner.

Isca at Borde Hill, West Sussex
Launched within the restored grounds of Borde Hill in West Sussex, Isca is a new garden-led restaurant set inside a striking glasshouse overlooking the estate’s reimagined walled kitchen garden. Just 40 minutes from London, the restaurant serves seasonal dishes built around estate-grown produce, foraged herbs and edible flowers, with menus shaped by the rhythms of the surrounding biodynamic garden. Interiors by Nicola Harding blur the line between indoors and outdoors, while botanical cocktails are served from the adjacent bar, The Cosmos. Isca forms part of a wider transformation of the estate’s historic stables, alongside all-day café Edie’s Kitchen, produce-led shop the Pantry and creative events space the Workshop. Isca’s opening menu includes Sussex Charmer croquettes with Sichuan pepper and pickled walnut; roast Sussex scallop with ’nduja, milk bread and sea beet; and pork served with preserved walled garden quince, mustard and green beans.

Regency House, Belfast
One of Belfast’s most ambitious restaurant openings of the year arrives this summer as acclaimed chef Chris McClurg and pastry chef Alice Stewart take over Regency House, the city’s Michelin Key-awarded boutique hotel. Within Belfast’s historic Queen’s Quarter, the landmark property will reopen with an expanded restaurant at its centre, marking the first time the building has become fully accessible to the public. McClurg, formerly chef-patron at Paul Ainsworth at No.6 in Cornwall and winner of Great British Menu, returns to his home city alongside Stewart to launch their first independent venture together. The 40-cover restaurant will feature an open kitchen, a private dining cellar and a courtyard dining space, while the interiors will balance the grandeur of the original architecture with a more contemporary warmth. A bold new chapter begins at Gwen in Machynlleth this June as acclaimed chef Peter Sanchez-Iglesias takes over the intimate Welsh restaurant. Working alongside Gareth Ward and Amelia Eiriksson of Ynyshir, Sanchez-Iglesias will relaunch the space as an ultra-personal dining experience centred around fire, hyper-seasonal produce and immersive service. Guests will move through two open kitchens during a multi-course tasting menu that changes daily based on the best available ingredients. The experience is intentionally stripped back and intimate, with Sanchez-Iglesias and a single assistant cooking for just eight diners per service. Interiors, redesigned by Eiriksson, remain dark and atmospheric with bespoke ceramics, ironmongery and tableware created by local artisans. Wine is available by the glass throughout, with pairings selected in collaboration with the team at Ynyshir.

For the first time, visitors can now step inside the private apartments used by Queen Elizabeth II at the Palace of Holyroodhouse in Edinburgh. Launched to mark the centenary of her birth, the limited-run tours will operate for 100 days only (until 10th September), offering rare access to the rooms where the late queen stayed during official visits to Scotland throughout her 70-year reign. Small guided groups will move through spaces including the Royal Breakfast Room, Dressing Room and private Sitting Room, where the Queen would work between engagements. Alongside the interiors themselves, visitors will also see a selection of outfits and accessories worn during significant moments in Edinburgh. The experience concludes with access to the wider palace, including the State Apartments and the historic chambers of Mary, Queen of Scots.
