Outlaw’s Guest House, Port Isaac
Celebrity chef Nathan Outlaw has two restaurants in Cornwall, including the newly updated Outlaw’s New Road in Port Isaac. Now, he’s about to open a project in the same seaside town where guests can enjoy a two-night foodie retreat. Housed in the Victorian building that used to be The Stargazy Inn, Outlaw’s Guest House will have eight chic bedrooms, some of which overlook the beautiful Port Isaac beach. Ugly Butterfly, St Ives
Ugly Butterfly is chef Adam Handling’s first restaurant and bar in Cornwall, on the waterfront at Carbis Bay in St Ives. Much like his flagship Eve Bar in London, the restaurant uses waste to create interesting dishes and cocktails paired with local ingredients. The restaurant has its own ‘gallery of creativity’ featuring jars filled with by-products from the kitchen which have been saved, preserved and fermented for drinks – including spent coffee syrup, beef fat whisky and strawberry vinegar. Drinks include a Cornish take on a dry martini, the ‘Fal-Town’, created by infusing shucked oyster shells and their juices into Ketel One Vodka, finished with samphire and seaweed; and the ‘Bassets Cove’ made with tequila, chilli-topped liqueur and tomato skins. Food wise, there’s a small menu that changes regularly with the seasons – right now, diners can expect dishes like gin-cured trout with Cornish salted caviar, roast halibut with potted shrimp, mushroom agnolotti, baked rhubarb and custard, and dark chocolate served with coffee and artichokes.

Springtide, Charlestown
This new seafood restaurant is in Charlestown, a pretty village on the outskirts of St Austell on the south coast of Cornwall. Specialising in oysters and fresh seafood served outside on its pretty patio overlooking the harbour, you could easily spend a few hours here trying the catch of the day with a glass or two of rosé. Open from Wednesdays to Sundays, it’s the ideal spot for a leisurely lunch or early supper. Starters include crispy calamari with aioli, grilled scallops with samphire and parsley butter, pork croquettes, and devilled whitebait with chilli and lime mango, while larger dishes consist of breaded sole with homemade chips, seafood chowder, prawn linguine, and beer-battered cod and chips with mushy peas and tartare sauce. Save space for buttermilk panna cotta with raspberries, charred pineapple with coconut ice cream, or Cornish sorbet for dessert.

Argoe, Newlyn
Argoe opened at the end of last year and has already become a popular seafood spot for locals and those in the know. This cool restaurant is set in two former lifeboat cabins just above the pretty Newlyn harbour, and pays homage to the town’s fishing history by serving fresh seafood alongside local produce. Menu highlights include pickled herring with horseradish and mustard leaves; braised cuttlefish and fried potatoes; deep-fried sprats with tartare sauce; pollock fillet with scallops and butter; and monkfish tail with rosemary and garlic.

New Yard Restaurant, Helston
This restaurant isn’t strictly new as it’s been part of the Trelowarren Estate in Helston for over 600 years, but it was recently awarded a Green Michelin star, to celebrate its sustainability efforts. All the food on the menu is foraged from the estate and dishes change regularly with the seasons. Guests can dine inside the stylish courtyard or out on the patio for a casual lunch or treats from its on-site bakery. From Wednesdays to Saturday nights, there are supper clubs every week (£75pp) where diners can enjoy bread from the bakery, canapés from the kitchen, and a three-course candle-lit meal. Previous dinners have included dishes like rainbow chard with leeks, lemon and parsley; spinach, smoked roe and asparagus; rack of pork with beetroot and crackling; frozen marshmallows with sparkling wine; and a selection of cheeses with apple and ‘yesterday’s bread’.

Kuki Kai, Carnon Downs
Kiwi chef Jude Kereama has been serving his South Pacific-inspired dishes at Kota Kai Kitchen & Bar in Porthleven for over ten years, one of only three restaurants in Cornwall to have been awarded three AA Rosettes. He’s set to open another restaurant in Carnon Downs, Truro, later this month. Kuki Kai will serve small plates and fresh seafood caught daily from Cornish waters. The menu has been kept under wraps, but we know diners can expect dishes like Porthilly oysters, pan-fried hake, and tempura with wasabi tartare – all of which have been reimagined with Jude’s signature Asian-inspired twist.
