Cast Iron comes with several advantages. First, it’s designed for optimal heat convection, moisture retention and moisture/pressure release. As well as creating a range ideal for the development of flavour and texture when cooking, other benefits include its durability, how easy it is to clean, and there’s no need to season the pots and pans (they’re ready to go right out of the box). Importantly, when using them frequently for multiple dishes, they are non-reactive to acidic and other ingredients, they don’t absorb flavour, so nothing will transfer from one meal to another, and the exterior enamel is smooth – these products will not scratch smooth, ceramic or induction stovetops.
