Apple Smoothie Bowl With Granola

Pink Lady apples make a fantastic addition to a beautiful pink smoothie bowl. The recipe for the granola makes enough for three or four bowls so you will have leftovers for the next day, too. If you want to change it up a bit, the granola is also great with chopped apple and yoghurt, or eaten on its own as a snack.

Ingredients
For The Granola
8 tbsp of porridge oats
2 tbsp of Brazil nuts
2 tbsp of pumpkin seeds
2 tbsp of dried cranberries
2 tbsp of coconut oil
2 tbsp of agave syrup
1 tbsp of flax seed
For The Smoothie
2 Pink Lady apples
100g of vegan yoghurt
2 handfuls of strawberries
1 banana
1 tbsp of agave syrup
Method
Step 1

To make the granola, first chop the Brazil nuts into small pieces.

Step 2

Toast the Brazil nuts, pumpkin seeds, flax seeds and oats in a dry frying pan for about 3-4 minutes or until you can start to smell the fragrance of the nuts.

Step 3

Add the coconut oil, syrup and cranberries and toast, stirring frequently until the pumpkin seeds are starting to pop.

Step 4

Turn out onto a plate to cool.

Step 5

Once cool, break up into clusters.

Step 6

For the smoothie, core the apples, but leave the peel on. Chop the banana and strawberries. Place them all in a blender along with the yoghurt and agave and blend until smooth.

Step 7

Pour into bowls, top with slices of apple and some granola. Enjoy!
