Gin-Soaked Strawberries & Cream Sundae

This is a delightfully fresh dessert. The soaked strawberries are good for eating on their own, but are taken up a notch when joined by rich clotted cream, crisp shortbread and ice cream. This recipe can easily be quartered if you want to make a quick one for yourself.

Total Time
15 Minutes Plus 20-40 minutes or overnight to soak
400g of fresh strawberries, hulled & halved (or quartered, if larger)
Grated zest & juice of 1 lime
1 handful of fresh mint, leaves picked & finely chopped
2 tbsp of gin (or use elderflower cordial for an alcohol-free dessert)
2 tbsp of caster sugar
4 scoops of vanilla ice cream
50g of clotted cream
100g of shortbread, crumbled
Step 1

Tip the strawberries, lime zest and juice, mint, gin (or cordial) and sugar into a large bowl, mix together, then leave to macerate at room temperature for 20-40 minutes until the strawberries have softened and you have a syrupy liquid, or cover and leave them in the fridge overnight.

Step 2

Into four large glasses, layer spoonfuls of the vanilla ice cream, with little teaspoon dots of the clotted cream, a crumble of the shortbread, some of the soaked strawberries and a drizzle of the syrup. Continue layering like this until everything is used up, finishing with a spoonful of ice cream, a few strawberries and a crumble of shortbread. Serve and enjoy!
