One Pan Cookie

This gooey, melty chocolate chip cookie is a great sharer. You could even make double the dough and pop half into the freezer for another time. Pop a scoop of ice cream into the middle when it comes out of the oven – heaven.

Ingredients
125g of softened unsalted butter, plus extra for greasing
100g of (ideally golden) caster sugar
1 large egg
2 tsp of vanilla extract or vanilla bean paste
1 mug of plain flour
1 tsp of baking powder
½ mug of dark or milk chocolate chips/smarties
½ tsp of sea salt flakes
Vanilla ice cream, to serve
Method
Step 1

Preheat the oven to 190°C/170°C Fan/Gas Mark 5 and lightly butter a heavy-based ovenproof frying pan.

Step 2

Beat together the butter and sugar until light and fluffy, then beat in the egg and vanilla. Finally fold in the flour, baking powder and chocolate chips along with the sea salt flakes. Bring together with your hands to make a large ball of cookie dough.

Step 3

Spoon and push down the cookie dough into the greased pan, ensuring the dough is squished up to all the edges of the pan. Pop it into the oven and bake for about 30 minutes until lightly golden on the edges but still a little gooey in the centre. Top with a large scoop of vanilla ice cream and enjoy.
