Pumpkin Spice Muffins

These simple pumpkin muffins are a cinch to make, absolutely delicious, and full of flavour. Plenty of pumpkin, just enough spice, and not even close to dry, they're the perfect choice for this time of year, too.

Ingredients
215g of pumpkin puree (this comes in a can & is available in supermarkets)
2 eggs
125ml of sunflower or vegetable oil
75ml of water
300g of caster sugar
225g of self-raising flour
1 tsp of bicarbonate of soda
3 tsp of mixed spice
Pumpkin seeds
Method
Step 1

Pre-heat the oven to 160°C (Fan).

Step 2

In a large mixing bowl, whisk together the pumpkin puree, eggs, oil and water then add in the sugar, flour, bicarbonate of soda and mixed spice and whisk until a smooth batter is formed.

Step 3

Divide the batter evenly between muffin cases, top with a sprinkling of pumpkin seeds and bake for 25-30 minutes until risen, golden and springy to the touch.

Step 4

Allow to cool before serving.
