Four new dishes have been created at 45 Jermyn St. to showcase truffle in its purest form. The star of the show comes in the form of the toasted cheese sandwich: the epitome of decadent comfort food, homemade sourdough is filled with raclette cheese, whipped butter and truffle shavings before being topped with fresh shaved truffle at the table. Other dishes include homemade tagliatelle with parmesan and shaved truffle; and 24-month parmesan risotto with a splash of champagne and sliced white truffle.

Truffled Spaghetti at Angler
Come truffle season, Michelin-starred Angler in the City’s South Place Hotel turns its attention to all things truffle. Using pasta as the main vessel for serving it, the kitchen – headed up by Gary Foulkes – will be serving both hand-rolled spaghetti with 36-month aged parmesan and white truffle; and wild boar agnolotti with fermented barley, ceps and white truffle. Expect wonderful flavours and exceptional presentation.

On the ground floor of members club Quo Vadis there’s a small but perfectly formed restaurant headed up by Jeremy Lee. This season, Piedmont truffles will be appearing in the kitchen and sold at cost price, currently £3 per gram. Lee suggests diners opt for his specialty of freshly made, silky tajarin pasta as a vehicle for the delicacy, but guests are also encouraged to add truffle to any or all other dishes on the menu.
