280g of plain flour
1 tsp of baking powder
1 ⁄4 tsp of salt
115g of butter
150g of brown sugar
2 eggs, beaten
5 ripe, mashed bananas
3 tbsp of sweetened condensed milk
1 tsp of vanilla extract or paste
2 tbsp of butter
1 loaf of banana bread
Icing sugar for dusting
1 loaf pan (23cm x 13cm ), lightly greased
Step 1Preheat an oven to 180°C (350°F) Gas 4. Prepare the loaf pan.
Step 2In a large bowl, combine the flour, baking powder and salt. In a separate medium bowl, cream together the butter and brown sugar. Stir the eggs in one at a time and add the mashed bananas until combined. Add the banana mixture to the flour mixture and stir with a wooden spoon until mixed together. Pour into the greased loaf pan. Bake for 1 hour, or until a cocktail stick inserted into the centre comes out clean. Let it cool for 5-10 minutes and then turn it out onto a wire rack.
Step 3In a small-medium bowl, beat the eggs, sweetened condensed milk and vanilla with a fork. Set aside.
Step 4Melt the butter in a large frying pan over a medium heat. Slice the banana bread into 4 thick slices.
Step 5Dip each slice into the egg mixture and place into the hot frying pan. Cook on each side for 1-2 minutes until golden brown. Plate and dust with icing sugar. Serve with a side of maple syrup.
