The Mayfair Chippy was founded in 2015 by George Hammer, Pete Taylor and Jamie Jones. The concept was to design a quintessentially British chippie influenced by the owners’ northern roots. Traditional fish and chips are the restaurant’s specialty, but it also serves classic British dishes such as pulled lamb shepherd’s pie alongside Cornish fish and shellfish specials. Hook started life as a simple market stall in Dublin in 2011, where the team made a name for itself with its ‘new-school’ take on fish and chips. Today, its Camden restaurant is a popular spot. Housed in a grand dining room in the Corinthia Hotel, Tom Kerridge brought many of his team from the Hand & Flowers, The Coach and The Butcher’s Tap in Marlow to recreate his relaxed fine-dining vibe in the capital. Notting Hill’s The Chipping Forecast buys from suppliers which use traditional, ecologically friendly, sustainable fishing methods. Provenance is very important to the business and the fish the kitchen serves can be traced back to the fishermen who caught it, their boat and where it was landed. Customers can select the likes of cod, hake, haddock and monkfish scampi, and can choose to have their fish beer battered, gluten-free beer battered, simply grilled or in panko breadcrumbs, fried in either beef dripping or rapeseed oil. Guests can also opt for St Austell Bay mussels steamed in BrewDog Punk IPA, garlic, cream and parsley; grilled Cornish sardines; and Cornish crab on toast.

Kerbisher & Malt was established in the west London suburb of Brook Green by chef Saul Reuben and his brother-in-law Nick Crossley in 2011. The aim, then and now, was to make fish and chips the way the pair thought they should be – using fresh fish from sustainable sources, served with homemade salads, great beers and coffees in environmentally friendly packaging and in a nice place to sit down. The number one rule? No soggy chips. The team peels and cuts the potatoes themselves and fries them twice at different temperatures, giving the chips a crunchy exterior and fluffy, well-flavoured interior. The kitchen also makes its own sauces (apart from the ketchup, which is strictly Heinz), batters and mushy peas and have even brewed its own beer, Kerbisher Pale Ale.
