Chestnut & Banana ‘Ice Cream’

Forget hours of churning or time spent taking ice cream in and out of the freezer. This recipe – courtesy of Merchant Gourmet – makes light work of this summer dessert.

4 bananas
2 tbsp of peanut butter
4 dates
1 x 180g pouch of Merchant Gourmet Whole Chestnuts
Step 1
Put the banana slices in a freezer bag or arrange on a tray in a single layer and place in the freezer for a minimum of 2 hours, or until completely frozen.
Step 2
Put the frozen bananas in a blender with the peanut butter and dates and blend until smooth. You might have to stop the blender and stir everything a few times until the mixture becomes smooth and creamy.
Step 3
Once it’s nearly ready, add the chestnuts and blitz a few times until combined but you still have a few chunks of chestnut. Serve immediately.
