Ingredients
Palm size chicken breast, cubed
½ red pepper, chopped
½ red onion, chopped
1 tsp of Fresh ginger, grated
1 clove of garlic, crushed
½ tsp of turmeric
½ tsp of ground cumin
½ tsp of ground coriander
3 cloves
3 cardomon pods, cracked
¼ tsp of chilli powder
Pinch of white pepper
1 tsp of coconut oil
1 heaped tsp of tomato puree
Juice of half a lemon
Fresh coriander chopped to garnish
Method
Step 1
Heat coconut oil in a pan on a low to medium heat and add cloves, cardomon, onion, garlic and red pepper and stir fry for five minutes.
Step 2
Add the chicken, remaining spices, tomato puree and 50ml water and stir it all together thoroughly.
Step 3
Let it simmer for 15 minutes until chicken is cooked. In, the mean time, prepare quinoa as per packet instructions.
Step 4
When chicken is cooked, stir in the juice of half a lemon.
