8 Tequila Cocktails To Make This Weekend

From fruity blends to frozen drinks perfect for late summer evenings, we asked eight top bartenders and brands to share their favourite tequila cocktails. Here’s what they recommend making this weekend…

Pomegranate Margarita

1 lime
2 tbsp of caster sugar
1 tbsp of fine sea salt
35ml of tequila
1 tbsp of triple sec
60ml of pomegranate juice
1 tsp of agave syrup
1 tbsp of pomegranate seeds
Method
Step 1

Cut the lime into round slices. Use of the slices to rub around the rim of a tumbler. Place the sugar and salt on a flat plate, mixing well. Dip the rim of the glass into the mix.

Step 2

Place the tequila, triple sec, pomegranate juice and agave syrup into a cocktail shaker with ice. Shake well.

Step 3

Add ice to the tumbler and a few lime wheels and then strain the tequila and juice into the glass. Serve with extra pomegranate seeds.

Meridian

Ingredients
30ml of blanco tequila
5ml of green chartreuse
15ml of Lillet Blanc
15ml of basil cordial (either homemade or shop-bought)
20ml of egg white
20ml of fresh lemon juice
Method
Step 1

If making the basil cordial, add 25g of basil, 150g of sugar, 150g of water and 0.5g of bicarbonate of soda in a blender. Blitz and strain through a jay cloth.

Step 2

Mix all the ingredients together and shake hard with cubed ice.

Step 3

Finely strain into a coupe and serve. Garnish with a small basil leaf.

Margarithai

Ingredients
40ml of Volcan tequila
20ml of Casamigos mezcal
20ml of fresh lemon juice
15ml of agave
5 coriander leaves
To Garnish
lime wedge
black salt
lemongrass slice
Method
Step 1

Take a martini glass and rub the cut lime wedge across one half of the rim. Pour the black salt onto a small plate and tap the limed side of the glass into the salt to coat. Set the glass in the fridge until you are ready to serve.

Step 2

Add all the cocktail ingredients into a shaker with a couple of ice cubes.

Step 3

Shake well and then double strain into the chilled glass. Cut a slice of lemongrass and add as a final garnish. Serve immediately.

Like A Bird

40ml of Tapatio blanco tequila
10ml of Bruxo mezcal
10ml of agave syrup (you can buy this in the supermarket)
10ml of lime juice
10ml of grapefruit juice
Grapefruit soda
Method
Step 1

Combine the tequila, mezcal, agave syrup, lime juice and grapefruit juice in a shaker over ice.

Step 2

Strain over ice into a salted highball glass.

Step 3

Top up with pink grapefruit soda.

Green Chilli Margarita

2-3 tbsp of finely crushed sea salt
2-3 small green chillies
3-4 cubes of ice
50ml of tequila
50ml of Cointreau
50ml of fresh lime juice
Method
Step 1

Put the salt into a flat saucer and take two Martini glasses or small whisky tumblers and run a wet finger over the rim.

Step 2

Dip the rims into the salt and set aside.

Step 3

Put the green chillies into a mortar and give them a good crush or bash them with a wooden spoon to release the spices.

Step 4

Put them into a cocktail shaker, add the ice, tequila, Cointreau and lime juice, and shake.

Step 5

Pour into your prepared glasses and enjoy.

El Peño

35ml of blanco tequila (any brand)
15ml of orange gin
50ml of grapefruit juice
15ml of lime juice
15ml of jalapeno syrup (can be substituted for sugar syrup & some fresh chillies)
Method
Step 1

Place all the ingredients in a cocktail shaker and mix well.

Step 2

Strain and pour over ice, garnishing with fresh chillies.

Paloma

50ml of tequila blanco
200ml of pink grapefruit soda
Freshly squeezed lime juice
Smoked sea salt, to garnish
Method
Step 1

Roll the rim of a highball glass in freshly squeezed lime juice, then sprinkle a spoonful of smoked salt onto a place and roll the glass into it, to coat the rim.

Step 2

Fill a cocktail shaker with ice, then add a squeeze of fresh lime juice and the tequila. Shake until the outside of the shaker feels cold, then strain into your prepared glass.

Step 3

Top with pink grapefruit soda. Add a few fresh ice cubes to garnish and serve with a wedge of fresh grapefruit.

Chilli Mango Margarita

15ml of Cointreau
of a mango mixed with 100ml of mango juice
Lime & chilli to garnish
Sea salt & chilli powder for the rim
Method
Step 1

Add all the ingredients to a shaker with ice, shake and strain.

Step 2

For a fun, frozen twist, blend all the ingredients together with frozen mango.
