Frozen Pina Colada

Ingredients
50ml of Doorly’s 3 Year Old Barbados rum
25ml of Bristol coconut syrup
50ml of pineapple juice
Handful of ice cubes
Wedge of lime
Method
Step 1

Blitz all the ingredients in a blender and pour into a paloma glass.

Step 2

Garnish with a wedge of lime.

Cornalina

Ingredients
For the cocktail:
35ml of Quinta do Infantado white port
25ml of manzanilla
12.5ml of sweet vermouth
12.5ml of dry vermouth
10ml of rooibos tee cordial
For the cordial:
200ml of water
200ml of caster sugar
25ml of lemon juice
3 tsp of rooibos tea loose leaves
Method
Step 1

For the rooibos cordial, boil the water, add the sugar and stir well until it dissolves. Add the leaves and let infuse as much as needed (up to 10 minutes). Strain and bottle.

Step 2

For the cocktail, combine all the ingredients into a shaker. Add ice and shake well. Double strain into a coupe glass. Garnish with an orange peel.

Safira Rose

Ingredients
50ml of tequila
15ml of elderflower cordial
200ml of grapefruit soda
5ml of rose petal water
Maldon salt
Method
Step 1

Dip half the rim of a highball glass into a bowl of lime juice, then sprinkle some Maldon salt onto a saucer and dip the glass to coat half of the rim.

Step 2

Add cubed ice into the glass and pour in your mezcal and elderflower. Stir well, add more ice to fill up the glass, then top up with grapefruit soda water.

Step 3

If you have a perfume pump, fill it with rose petal water and spray the drink.

Step 4

Alternatively add 5ml (⅓ of a teaspoon) on top of the drink and stir gently.

Step 5

Garnish with an edible flower.

Frozen Palomas

Ingredients
250ml of grapefruit juice
80ml of tequila
80ml of lime juice
30ml of agave
Rock salt, to garnish
Grapefruit wedges, to garnish
Method
Step 1

Pour the grapefruit juice into ice-cube trays and place in the freezer for at least 2 hours or until frozen solid.

Step 2

When you’re ready to make the frozen palomas, combine grapefruit ice cubes, lime juice, tequila and agave in a high-power blender.

Step 3

Blitz until the frozen palomas are a slushy-like consistency. If they taste too tart, add a bit more agave. If they are too thick, add a splash of grapefruit juice.

Step 4

Serve in glasses with a salt rim and garnish with a grapefruit wedge.

Sassy Highball

40ml of Jameson Black Barrel whiskey
15ml of chestnut honey
15ml of verjuice
1 dash of Angostura Bitters
125ml of ginger beer
Method
Step 1

Combine all the ingredients except the ginger beer in the shaker.

Step 2

Add ice and shake vigorously for about 5 seconds.

Step 3

Strain into a highball glass filled with ice.

Step 4

Top off with ginger beer and stir gently.

Step 5

Add a straw and crushed ice. Garnish with a mini apple on top.

Boho Negroni

Ingredients
20ml of Saffron Gin
25ml of Aelred Nectarine Aperitif
20ml of Mancino Bianco Ambrato Vermouth
10ml of Luxardo Bitter Bianco
Large clear ice cube, to serve
Ginger candy, to garnish
Sage leaf, to garnish
Method
Step 1

Mix the first four ingredients in a tumbler.

Step 2

Pour over the large ice cube.

Step 3

Garnish with ginger candy and a sage leaf.

Mermaid Pink Gin Bitter French

25ml of Mermaid Pink Gin
10ml of Campari
12.5ml of lemon juice
12.5ml of sugar syrup
Champagne, to top up
Twist of grapefruit, to garnish
Method
Step 1

Combine the gin, Campari, lemon juice and sugar syrup into a shaker and shake for a few seconds.

Step 2

Pour into a chilled flute and top up with champagne. Garnish with the twist of grapefruit.

Lychee Martini

50ml of vodka
90ml of lychee puree
10ml of elderflower syrup
Method
Step 1

Add the vodka, lychee puree, syrup and some ice to a cocktail shaker.

Step 2

Shake well and serve in a martini glass over ice.

Seventy One Gin Golden Martini

70ml of Seventy One gin
10ml of Dolin dry vermouth
Grapefruit twist
Method
Step 1

Fill a mixing glass with ice.

Step 2

Add the gin and the vermouth.

Step 3

Stir slowly until chilled.

Step 4

Strain into a chilled martini glass.

Step 5

Add a thin grapefruit twist.
