Healthy Poké Bowl

Poké bowls are low on calories without losing and flavour or taste. Plus, this one is easy to prepare, rich in protein, and bolstered by healthy fats. Finally, apple cider vinegar dressing provides polyphenols, detox benefits, and blood sugar balance.

Ingredients
2 organic or free-range eggs, at room temperature
Iced water
200g of long-stem broccoli, ends trimmed & chopped
1 tbsp of rapeseed oil
1 tbsp of cold-pressed oil (flaxseed, hemp seed, pumpkin seed, extra virgin olive)
1 small shallot, finely chopped
1 tbsp of apple cider vinegar
½ tbsp of Dijon mustard
½ small cabbage, shredded (savoy, hispi, cavolo nero)
100g of baby spinach
6 radishes, thinly sliced
Flesh of ½ ripe avocado, sliced
1 tbsp of pumpkin seeds
Sea salt & freshly ground pepper
Method
Step 1

Preheat the oven to 220°C/425°F and line a baking tray with foil.

Step 2

Bring a pan of water to the boil. Add the eggs and cook for 6 minutes so that the whites have set but the yolks are still runny.

Step 3

Carefully remove the eggs and briefly hold them under cold running water before adding them to a bowl of iced water. Once they’re cool enough to handle, peel them and cut them in half. Then set aside.

Step 4

Add the broccoli with the rapeseed oil to the foil-lined tray, season and then mix together to coat.

Step 5

Roast in the oven for 10 minutes. While that’s happening, prepare the dressing by combining the cold-pressed with the shallot, vinegar and mustard, and then season to taste.

Step 6

Add the cabbage and spinach to a largish bowl and combine with the dressing, rubbing it into the cabbage leaves to soften them a little. Then add the broccoli, radishes, avocado, pumpkin seeds and eggs, and serve.
