Tomos Parry x Fforest Farm, Wales
This September, Michelin-starred chef Tomos Parry will take his London restaurants – Brat, Mountain and Brat x Climpson’s Arch – to Wales for one weekend at Fforest Farm on the West Welsh coast. From Friday 18th to Sunday 20th September, more than 30 members of the team, including chefs, bakers and sommeliers, will join guest collaborators to create a weekend of menus, talks and workshops inspired by the surrounding landscape. Ingredients will be sourced directly from Welsh suppliers, with the team fishing for wild shellfish, gathering produce from Awen Organic Farm and sourcing cheese and stone-ground flour locally. Expect Parry’s signature fire-led cooking, alongside contributions from guest chefs, artists, designers and craftspeople exploring Wales’ food, farming and creative heritage.

Homegrown Festival at Virginia Park Lodge, Ireland
Following the sell-out success of this year’s Homegrown festival, Richard Corrigan and the team at Virginia Park Lodge have released a limited number of overnight tickets for Sunday 19th October. Guests can look forward to a feasting lunch from Henry Harris of Bouchon Racine, recently named the UK’s Best Restaurant at the National Restaurant Awards, before the weekend comes to a close with a wrap party at Corrigan’s nearby pub, The Deerpark Inn. Expect live music, cocktails and tacos from Lily Ramirez-Foran, alongside a stellar line-up of chefs and food personalities. The wider weekend programme includes Dame Prue Leith, Angela Hartnett, Robin Gill, Sally Barnes, Luke Holder, Neil Borthwick and Valentine Warner.

Unplugged Archie, Leicestershire
Unplugged, the UK’s original digital detox escape, has launched Archie – its first food-focused cabin in the Vale of Belvoir, just over an hour from London. Created in partnership with outdoor cooking brand Big Green Egg, the new cabin combines Unplugged’s signature 72-hour phone-free stays with a focus on cooking and eating well. Guests can head out to explore local farm shops before returning to prepare everything from pizzas to slow-cooked feasts over the fire. Alternatively, a locally sourced BBQ hamper can be delivered straight to the cabin, full of grass-fed meat, seasonal vegetables and local condiments. There’s also a private wood-fired hot tub for winding down at the end of the day.

The Candover, Hampshire
The Candover is a former coaching inn that recently reopened following an extensive restoration. In the Hampshire village of Preston Candover, between Winchester and Alresford, the pub has been transformed into a stylish country retreat with ten individually designed bedrooms, two family suites, a private dining room, expansive gardens and a relaxed all-day dining offering. Interiors by architect Rebecca Haines-Gadd combine original fireplaces, timber and stone floors, limewashed walls, antique furniture and a handcrafted oak bar. Outside, there’s an outdoor bar, pizza trailer and large playground. Head Chef Oli Abbott focuses on seasonal, locally sourced ingredients, with a menu spanning flame-grilled meats, vegetables and lighter dishes. There are playful touches too, including a banoffee pie that can be ordered at any time of day – breakfast included.

Fire Chefs Dinner at Clanfield, Cotswolds
To mark the end of summer, Country Creatures founders Georgie and Sam Pearman will host their inaugural Fire Chefs Dinner on Saturday 12th September in the beautiful village of Clanfield, home to The Double Red Duke and The Mason’s Arms. Georgie and Sam will host long tables for 80 which will snake their way along the grass, with hay bale seating and candlelit lanterns guiding guests to their seats. The evening will bring together chefs Oli Brown, Ana Ortiz and Miller Prada – all known for their open-fire cooking – for a communal feast celebrating seasonal produce. Open-fire cooking will take centre stage, with the chefs working over the embers to prepare dishes using produce from some of the Pearmans’ favourite local suppliers. Expect slow-cooked meats, fire-charred vegetables and plenty of sharing plates, accompanied by live music from local artists.

Made In Oldstead, Nationwide
To mark 20 years since the Banks family took over The Black Swan in Oldstead, Yorkshire, chef Tommy Banks is bringing the restaurant’s cooking to homes across the country. Made in Oldstead’s limited-edition anniversary delivery menu is a six-course celebration created by Banks alongside executive chef Callum Leslie and head chef Alice Power. Staying true to the restaurant’s hyper-local approach, the menu showcases ingredients from North Yorkshire, including wild garlic, lovage, elderflower and Crapaudine beetroot, alongside lamb and beef reared on the family farm. Dishes include duck liver and blackcurrant croustade, braised beef cheek with laminated ale and onion brioche and elderflower parfait with sheep’s yoghurt, caramelised white chocolate and honeycomb. Priced at £119 for two, the menu is available for nationwide delivery on 27th and 28th August.

MOR, Cornwall
Chef Tom Sellers has opened MOR in St Ives, a new coastal restaurant inspired by Cornwall’s landscape and produce. Named after the Cornish word for sea, the restaurant overlooks Carbis Bay and places local fishermen, growers and seasonal ingredients at the heart of its menu. An impressive raw bar and charcoal grill anchor the offering, with dishes including Cornish bluefin tuna tartare, smoked Mora Farm tomatoes with chilled dashi and shell-baked scallops with roasted chilli paste and salted butter. Guests can also choose from the day’s catch, including turbot, John Dory and lemon sole. Interiors by Shayne Brady (the man behind Simpsons-in-the-Strand and many of Maybourne’s beautiful spaces) combine natural stone, timber and sheer fabrics, with floor-to-ceiling windows blurring the boundary between inside and out. There’s also a 14-seat private dining room, while an on-site kitchen garden supplies herbs, vegetables and flowers.

Regency House, Belfast
One of Belfast’s most ambitious restaurant openings of the year arrives this summer as acclaimed chef Chris McClurg and pastry chef Alice Stewart take over Regency House, the city’s Michelin Key-awarded boutique hotel. Within Belfast’s historic Queen’s Quarter, the landmark property reopened with an expanded restaurant at its centre, marking the first time the building has become fully accessible to the public. McClurg, formerly chef-patron at Paul Ainsworth at No.6 in Cornwall and winner of Great British Menu, returns to his home city alongside Stewart to launch their first independent venture together. The 40-cover restaurant features an open kitchen, a private dining cellar and a courtyard dining space, while the interiors balance the grandeur of the original architecture with a more contemporary warmth. Upstairs, the hotel’s eight rooms and six suites remain part of the experience.

Smoking Goat at Flourish Farm, Cambridgeshire
On Sunday 23rd August, London restaurant Smoking Goat is heading to Flourish Farm in Cambridgeshire for a special all-day event celebrating the farm’s summer produce. Founded by Calixta Killander, Flourish Farm sits along the River Granta and uses regenerative and certified organic farming methods to improve soil health and biodiversity. Smoking Goat has worked with the farm for several years, including cultivating plants, herbs and vegetables specifically for the restaurant. For this one-off event, head chef Albert Smith will serve kha nom jeen – fermented rice noodles inspired by the team’s travels through southern Thailand – alongside nam ya, gaeng tai pla, northern-style nam ngiao and fresh herbs and vegetables. There will also be a selection of Smoking Goat’s favourite curries, including tai pla and nam ya.

Silchester Farm, Hampshire
Set on the Hampshire/Berkshire border, Silchester Farm offers a more relaxed take on the modern countryside escape. Accommodation ranges from larger houses for families and groups to The Pyggies, the farm’s elevated take on cabin living, complete with king-sized beds, freestanding baths and views across the grounds. Food is seasonal and rooted in the surrounding landscape, with produce coming from the farm’s kitchen gardens and local suppliers. Trough Farm Shop serves coffee, pastries, homemade bakes and provisions, while guests can enjoy grazing feasts, sharing plates and wood-fired cooking beneath the Dutch Barn. There are two bars serving local ales, wines and Silchester Farm’s own spirits, plus a swimming pool, tennis court and bikes for exploring the area. Seasonal events and communal dining add to the sociable feel, making it an easy-going alternative to a traditional country-house stay.

The Town House, Sussex
The Town House is a new restaurant with four bedrooms in the historic West Sussex town of Arundel. Created by husband-and-wife team Matthew and Jennifer Price, the intimate 17-cover restaurant occupies a restored Georgian building next to Arundel Castle. Matthew, formerly head chef at Sorrel in Dorking and The Vineyard at Stockcross, leads the kitchen, while Jennifer oversees front of house and the wine list. The seven-course tasting menu changes monthly, with summer dishes including Nutbourne tomato salad with Chalk Springs trout, elderflower and smoked tomato tea, followed by Nuthurst Farm hogget with elephant garlic, girolles and smoked anchovy. The four bedrooms continue the Georgian feel, with the main bedroom featuring a four-poster bed and views of the castle.

St Enodoc, Cornwall
St Enodoc by Paul Ainsworth is a new coastal hotel and dining destination in Rock, marking an exciting new chapter for the chef and his wife, Emma. The beautifully restored Cornish landmark features 20 elegant suites overlooking the Camel Estuary, just moments from the beach. At The Estuary Grill, the focus is on the very best of Cornwall’s land and sea, with meat, fish and seafood cooked over fire and served alongside sweeping estuary views from the rooftop terrace. For something more relaxed, The Flour Garden offers al fresco dining centred around Neapolitan-style pizzas, salads and homemade soft serves, showcasing the exceptional local suppliers Paul has worked with during his 18 years in Cornwall. The Ainsworth Collection’s most ambitious project to date, St Enodoc also has plans for a new gym and wellness centre, alongside further enhancements to the suites.

The Wellington, Kent
The Wellington is a classic pub in Margate, reimagined by Billy Stock and Ellie Topham with a focus on British-meets-French cooking, good wine and a relaxed atmosphere. Burgundy, cream and timber set the tone, while candlelight, handwritten menus and an open kitchen give the pub a warm, lived-in feel. The menu changes weekly and has included dishes such as crabmeat on toast with bisque, roast duck with duck-neck sausage and liver parfait, beef cheek and snail suet pudding, and quince trifle. There’s also a bar menu of more casual options, including duck sausage rolls, beef short ribs and Welsh rarebit. Ellie has put together a largely French wine list, with bottles spanning the country. We love the sound of the £35 Beef & Burgundy menu, which takes place every Wednesday.

The Pharmacy Field Kitchen, Somerset
The team behind The Pharmacy in Bruton has launched Pharmacy Field Kitchen, an outdoor dining and events concept centred around seasonal cooking, design and the Somerset landscape. Joint head chefs Zsuzsanna Toth and Marc Ackland will lead the project alongside Merlin Labron-Johnson, bringing together their experience of farm-to-table cooking, creative production and hospitality. The food will be driven by produce from local farms and gardens, with a focus on home-grown vegetables and mindful horticulture. Events will take place at Osip and The Pharmacy’s farms and other locations around Somerset, with an emphasis on making the landscape part of the experience. At some events, guests will be able to explore the farm, learn about the produce and even pick ingredients that will later feature during the dinner.

Cardinal Kitchen Garden, Edinburgh
Scottish chef Tomás Gormley has launched the Cardinal Kitchen Garden, a regenerative smallholding on the outskirts of Edinburgh created in collaboration with Bramblewood Farm. The project will strengthen the relationship between Gormley’s restaurant, Cardinal, and the local land, with the first crops including tomatoes, courgettes, beetroot, salad leaves, herbs and flowers. The aim is for the garden to provide the majority of the fresh produce used across Cardinal’s menus, creating a direct journey from garden to plate. A low-waste approach is central to the project too, with organic waste from the restaurant being transformed into nutrient-rich compost for the garden. The launch follows Cardinal’s new three-course Market Menu, which puts vegetables at the centre of the experience and showcases the garden’s seasonal produce. Priced at £25, it’s available at lunchtime from Thursday to Saturday.
