All The Best New Openings In Greece For Summer 2026
THE WELLNESS EXPANSION:
The Rooster, Antiparos
Since opening on Antiparos in 2021, The Rooster has become one of the Cyclades’ most sought-after stays. Set among sand dunes and wild gardens, the hotel combines minimalist design, spacious accommodation and a strong connection to nature. This year, its House of Healing wellness programme enters a new chapter through a partnership with Skin Design London. As well as facials using the brand’s products, guests can now access personalised experiences centred around longevity, restoration and balance, including advanced treatments, infrared sauna sessions, biohacking rituals and bespoke therapies. Sitting alongside the hotel’s organic farm, peaceful setting and thoughtful hospitality, it bolsters The Rooster’s reputation as one of the most compelling wellness destinations in the Mediterranean. Keep an eye out: further accommodation designed for families and a new 70s-inspired drinking den are also being added to this special hotel over the next year.

THE PAROS OPENING:
Parian Chronicle, Paros
Marking the Greek debut of Destination by Hyatt, Parian Chronicle offers a more residential approach to island hospitality. The 50-room property has been conceived as a collection of private residences rather than a conventional hotel, blending minimalist Cycladic architecture with warm, carefully considered interiors. Natural stone, soft linens and handcrafted details create a calming atmosphere throughout, while generous terraces frame views of the surrounding landscape. With a strong emphasis on privacy and authenticity, Parian Chronicle reflects Paros’s growing status as one of Greece’s most sophisticated destinations.

THE ANNIVERSARY:
Santa Marina, Mykonos
Few hotels are as synonymous with Mykonos as Santa Marina. On its own private peninsula overlooking Ornos Bay, the resort has spent four decades defining luxury on the island. To mark its 40th anniversary, the hotel will spend the summer hosting a programme of events featuring visiting chefs, wellness experiences and special performances. With its private beach, world-class dining and enduring reputation for discretion and service, Santa Marina looks all set to remain one of the Cyclades’ most iconic addresses.

THE DELI:
Lamarina, Sifnos
From Giorgos Samoilis – the chef behind celebrated Sifnos hotspots Pelicanos and Cantina – Lamarina is a new all-day deli celebrating the comforting dishes found in Greek homes. Right by the sea, the concept revolves around traditional tray-baked recipes, from rich moussaka and pastitsio to slow-cooked vegetables infused with olive oil and tomatoes. Desserts include syrup-soaked classics such as galaktoboureko and portokalopita, while freshly baked breads hit the counter throughout the day. Made for beach picnics, leisurely lunches and family gatherings, Lamarina captures the island’s relaxed rhythm and deep culinary heritage, and is another welcome boost to Sifnos’s growing reputation as one of Europe’s most exciting foodie destinations.

THE DESIGN-LED LAUNCH:
Eréma, Milos
Opening on the southeastern coast of Milos, Eréma is a 41-suite retreat from Empiria Group that draws inspiration from the island’s dramatic volcanic landscape. Sustainability sits at the core of the project, with energy-efficient systems, native planting and water-conscious design helping to minimise its environmental impact. Interiors feature natural textures, handcrafted details and calming earth-toned palettes, while every cliffside suite comes with a private pool and sweeping sea views. Alongside two Greek restaurants, a holistic spa and dedicated wellness spaces, the hotel offers proximity to Milos hotspots Adamas port and Provatas beach.

THE TENTED CAMP:
The Revery, Crete
Launching on 1st August, The Revery – a member of Leading Hotels of The World – will occupy a secluded location near pink-sand Elafonisi beach, in the wild surrounds of southwestern Chania. Rooted in nature and local culture, the property will comprise 24 safari-inspired tented pavilions and clifftop suites, each designed to immerse guests in Crete’s untamed beauty. THE FASHION TAKEOVER:
Burberry at One&Only Aesthesis, Athens Riviera
This summer, Burberry arrives on the Athens Riviera with a stylish takeover of One&Only Aesthesis. Within a protected coastal forest, the resort has been transformed with Burberry’s signature check, which has itself been reimagined in fresh Mediterranean-inspired tones across the hotel’s poolside areas, gardens and tennis and padel courts. Guests can enjoy exclusive styling appointments before or during their stay, offering the chance to curate a holiday wardrobe from Burberry’s latest collection. Holiday essentials stocked in the boutique include polo shirts, bikinis and Margate bags, crafted in raffia that’s been hand-crocheted into the iconic Burberry house check.

THE CRUISE:
Amangati, Aegean
Luxury hospitality group Aman is about to launch its first ocean-going vessel, and is taking reservations for its inaugural Mediterranean sailings. With just 47 suites, the Amangati ship has been designed to provide the privacy and spatial generosity associated with the brand’s resorts. Early itineraries will trace coastlines from Mallorca to Nice and Florence to Naples, but we really love the sound of its Greek itinerary, which moves from Athens to Rhodes, combining celebrated marinas with smaller harbours and remote anchorages. The seven-night voyage takes in Hydra, Milos, Santorini and Kalymnos, before a stop-off at Bodrum ahead of continuing to ancient Rhodes and the nearby Acropolis of Lindos.

THE CHEF RESIDENCIES:
Pelicanos, Sifnos
Right on Faros beach, Pelicanos combines laid-back coastal dining with the culinary ambition that has made Sifnos a gastronomic destination. Chef Giorgos Samoilis places local ingredients firmly at the centre of the menu, from inventive small plates to fresh seafood and house-made pasta (the crab cacio e pepe is a must-order). This summer, the restaurant is hosting a series of guest chef collaborations on its 10-seat roof terrace, welcoming acclaimed names from across Europe (including London’s Singburi and L’Oursin from Paris) for special one-night-only dinners. Alongside the food, there will be live DJ sets to accompany the sunsets.

THE ISLAND ESCAPE:
Odera, Tinos
The island of Tinos is just a short ferry ride from Mykonos, yet it remains an unspoilt gem with rustic landscapes, white-washed villages, uncrowded beaches, a bubbling-up food scene, great hiking… We could go on. It’s the third largest island in the Cyclades and, for our money, one of the archipelago’s most beautiful. It is still to be discovered by mass tourism, unlike its party island neighbour, though its recent culinary and cultural revival has started to attract the chic Athenian set (there’s a direct ferry) and in-the-know travellers. One reason Tinos is on the radar for 2026 is because of Odera, the island’s first luxury property. You’ll find it in a secluded bay 5km from the island’s capital, Chora, offering a private beach and club, 77 rooms and pool suites, and an expansive spa. Local craftmanship and traditions can be seen in every corner of the hotel, from Tinian stonework to marble furnishings and authentic dovecotes (you’ll see plenty of these charming structures across Tinos). All rooms come with magnificent sea views and a walk-in shower, but to really elevate your stay, opt for the Odera Residence, which has a large living area and private pool overlooking the Aegean. It’s a short walk down to the hotel’s own sandy beach, Vourni, and guests can rent the hotel’s private boat to further explore the island’s rock-lined coastline.

THE BIG-NAME RESTAURANT:
ROKA, Mykonos
ROKA has arrived in Mykonos, bringing its signature contemporary Japanese cuisine to a spectacular setting above Paraga beach. Within Hotel Fouquet, the new outpost combines beachside lounging, sea views and an open-air restaurant centred around the brand’s celebrated robata grill. Expect favourites such as black cod with yuzu miso, whole grilled seabass with shiso pesto and wasabi, plus an extensive selection of sushi and sashimi, alongside cocktails designed for long lunches and sunset aperitifs. Alongside poolside beds, curated DJ sessions and panoramic Aegean views, ROKA Mykonos also features some destination-only signature serves, including a Watermelon Spritz, Super Paloma and Sakura75.
