What’s New In Ibiza This Season

One of Paris’s cult dining destinations is heading to Ibiza for the summer. Casa Pregonda – the Montorgueil favourite known for its Balearic spirit and relaxed, sun-drenched cooking – has taken up residency at Experimental Beach Ibiza until the end of October. Bringing together Casa Pregonda co-founder Alexandre Giesbert and Experimental Beach chef Alexandre Larrea, the collaboration celebrates the flavours of the Balearics through a menu designed for long lunches, sunset dinners and lingering afternoons by the sea. Expect creamy tortilla topped with caviar, tuna crudo with ajo blanco, squid ink arroz and rich Basque-style cheesecake, alongside new dishes exclusive to Ibiza, including zamburiñas and tortilla with sobrasada. Cocktails lean equally transportive, with the sharp Sauvignon Jalapeños already shaping up to be one of the season’s signature serves.

Loewe’s cult-favourite Paula’s Ibiza collection is back for another season and, as expected, it captures that effortless, sun-soaked spirit the brand does so well. Inspired by the island’s iconic boutique, the capsule is a playful mix of flowing silhouettes, artisanal textures and vibrant prints, all designed to be layered and lived in. Opening inside Ibiza’s Unesco-listed Dalt Vila, Paradores de Ibiza brings one of Spain’s most historic hospitality brands to the island for the first time. Occupying the former Almudaina Castle at the highest point of the old town, the new Parador – which opens next month – will combine centuries of Mediterranean history with contemporary hotel design, offering panoramic views across the port and coastline. Original fortress walls, courtyards and archaeological remains have been carefully preserved, while contemporary art installations inspired by the Mediterranean run throughout the hotel. Guests will be positioned perfectly between Ibiza’s quieter cultural side and its nightlife scene, with restaurants, galleries and bars all within walking distance.
