The Wildhive Collection – the group behind the gorgeous hotel Callow Hall in the Peak District, is expanding its nature-led hospitality offering with the launch of Wildhive Eshott Hall, opening this summer. Set in a Georgian manor between Alnwick and Morpeth in Northumberland, the new site will feature woodland cabins with outdoor baths, restored stable rooms and a dedicated wellness space, The Coach House. The main house will house 14 bedrooms and The Garden Room restaurant, where chef David Bukowicki will showcase Northumbrian produce and ingredients from the walled garden. Interiors by Matt Hulme will draw on the surrounding moors. Bookings are now open.

Aparthotel brand Wilde has arrived in Cambridge with a smart new property set among the university colleges. The 227 studios and one‑bed apartments are designed for longer stays, with fully equipped kitchens and calm, contemporary interiors that nod to the city’s literary heritage. London studio Thurstan has shaped the social spaces, which look elegant without being too formal, while a curated art collection spotlights local talent. Outbuildings Dorset has added two standout cabins to its adults‑only farm hotel near Bridport. The Shelter #1 and #2 channel a touch of 70s glamour, each a private hideaway with floor‑to‑ceiling glass framing wide views of West Dorset’s hills. Guests can slide open the doors to sink into a brass hot tub, then retreat to an Emperor bed, log burner and a rainfall shower. This new hotel is set in one of the Cotswolds prettiest villages, Broadway. Set in a restored 17th‑century building, the ten bedrooms mix period details with contemporary design, arranged around a quiet central courtyard. The real draw is Moda, the fine‑dining restaurant led by James Wilson, formerly of The Newt. His nine‑course tasting menu leans on Scandinavian technique and meticulous sourcing, with dishes such as beef tartare with smoked bone marrow, Cornish lobster with dill and an elderberry tart with sheep’s yoghurt.

Glebe House Cabins

Devon

Glebe House, one of the loveliest boutique hotels in Devon, has added two new cedar-clad cabins, The Crow’s Nest, to its 15-acre smallholding in east Devon. Once a family hideout, the spaces have been reimagined by Akin Studio and Out of the Valley with a crafted, personal feel: reclaimed cheeseboards turned into kitchen shelving, Studio Haran ceramics, Dorset quilts and handmade artworks. Each one-bed cabin has a super-king bed, wood burner and a private deck with a sunken outdoor bath for stargazing. Guests can order seasonal dishes from the Glebe kitchen, while a new wood-fired sauna overlooking the Coly Valley completes the escape.

The team behind Michelin‑starred Timberyard and neighbourhood favourite Montrose has opened Haze, a new all‑day spot in Brown’s of Leith. Set within the former George Brown & Sons steelworks, the space has lofty ceilings, stainless-steel finishings and a central bar. From 8am, guests can drop in for coffee before moving on to small plates by exec chef Bart Stratfold – cheese, charcuterie and tinned fish designed to sit alongside low‑intervention wines sourced by Joseph Radford. Part of a wider creative hub, Haze will sit alongside seafood, pizza and whisky concepts, with future plans for a bakery and gelateria.

Margate locals will be pleased to know there’s a new neighbourhood opening from industry favourites Billy Stock and Ellie Topham. The Wellington brings a revived 19th‑century coaching inn back to life with a pub and dining room shaped by Kentish produce and a touch of French influence. In the bar, expect draught beers, ciders and simple Anglo‑French snacks, while the dining room leans into brasserie classics: cep vol‑au‑vent, crab on toast and a standout roast duck with duck‑neck sausage and liver parfait. Pies for two and thoughtful meat‑free dishes round out the menu.

The General Tarleton

North Yorkshire

Jeopardy Hospitality has reopened The General Tarleton, an 18th‑century coaching inn in the village of Ferrensby, marking the first project from the team led by chef Tommy Banks. The eight‑bedroom pub has been sensitively restored, with interiors that balance original features with warm, contemporary touches. Exec chef Aled Williams has created a menu that reworks pub classics through precise, ingredient‑led cooking – think pork crackling with apple butter, smoked haddock chowder and roasted cod with smoked onion and sea vegetables. There’s also a Sunday roast menu.
