Chocolate Espresso Martini: Copalli Cacao

Ingredients
40ml of Copalli Cacao
15ml of sugar syrup
20ml of coffee liqueur
20ml of espresso
Chocolate shavings
Ice cubes
Method
Step 1

Add all of the ingredients into a shaker with ice and shake.

Step 2

Strain into a chilled martini glass.

Step 3

Garnish with 3 coffee beans or chocolate shavings.

Flame of Love: Grey Goose

50ml of Grey Goose vodka
50ml of fino sherry
Method
Step 1

Stir the spirits in a cocktail shaker. Strain into a well-chilled cocktail glass.

Step 2

Set aflame an orange zest over the drink, then use as a garnish.

By Any Other Name: Grey Goose

50ml of Grey Goose vodka
20ml of rose water simple syrup (2 parts sugar, 1 part water, 6 dashes of rose water)
15ml of fresh lemon juice
50ml of rosé champagne

Step 1

Shake and strain over the centre of the sorbet in a straight-sided coupe glass. Top with champagne.

Step 2

Garnish with the basil leaf and serve immediately.

Balsamic Berry Old Fashioned: Scott Harris, Catoctin Creek Distillery

Note: The berry syrup can be made and stored separately and is great splashed over ice-cream.

15ml of aged balsamic vinegar
2 raspberries, to garnish
15ml berry syrup
For the berry syrup:
180g of blackberries
180g of raspberries
125g of sugar
250ml of water

Step 1

To make the syrup, bring mixture to a simmer for 10 mins, puree and strain.

Step 2

Combine all the ingredients over ice and stir in a rocks glass. Garnish with two raspberries.

Step 1

Build all ingredients in a chilled flute glass, top with prosecco, then garnish with the lemon peel.

Lychee Martini: Pink Marmalade

50ml of Pink Marmalade gin
20ml of lychee puree
50ml of lychee juice
20ml of lemon juice
1 egg white
3 raspberries on a cocktail stick
Method
Step 1

Pour all of the ingredients into a cocktail shaker.

Step 2

Shake hard for at least 12 seconds for the egg white to infuse and give the drink a foamy top.

Step 3

Pour contents into a martini glass and garnish with 3 raspberries on a cocktail stick, balanced on the rim of the glass.

Pink Lady: Monkey 47

45ml of Monkey 47 gin
20ml of lemon juice
15ml of applejack
1 egg white
2 dashes grenadine
Method
Step 1

Pour all the ingredients into a cocktail shaker.

Step 2

Add a handful of ice cubes.

Step 3

Shake and strain into a nice coupette glass. Garnish with a cherry.
