5 Easy 15-Minute Meals To Make At Home

Just because we’re all cooking more at home doesn’t mean we have more time to cook. From a quick tofu stir fry to a veg-filled spicy omelette that’s ready in minutes, here food writer and SL contributor Chloe Scott-Moncrieff shares her favourite speedy suppers.

Greens Orecchiette (V)

Ingredients
250g of orecchiette, otherwise conchiglie
200g of cavolo nero, finely chopped
2 garlic cloves
2 red chillies
60g of breadcrumbs
100g of parmesan, finely grated
Method
Step 1

Cook the pasta by following the instructions on the back of the packet. After 5 minutes, add the chopped cavolo nero and simmer for the final 3 minutes. Drain.

Step 2

Briefly sizzle the garlic, chilli, and breadcrumbs. Toss everything together. Season with salt, freshly ground pepper and parmesan. Serve.

Tofu Stir Fry (Vegan)

Ingredients
160g of marinated tofu, chopped
200g of green beans
1 red pepper, sliced
2 garlic cloves, finely chopped
200g of fresh noodles
2 tbsp of kecap manis
2 tbsp of soy sauce
Method
Step 1

In a large pan with a splash of oil, flash fry the garlic, then a minute later stir in the veg and tofu. Then, 3-4 minutes later, mix in the noodles.

Step 2

Pour in the kecap manis and soy sauce. Serve.

Black Bean & Chorizo Tacos

Ingredients
8 corn tortillas
1 red onion, finely sliced
2 avocados, flesh scooped and sliced
100g of chorizo ring, finely chopped
1 tin of black beans
1 tsp of ground cumin
20g of coriander
Method
Step 1

Heat the oil in the pan until it’s hot. Throw in the onion slices. Add a pinch of salt and cumin. Mix the beans in. When finished, sprinkle in the chorizo.

Step 2

Meanwhile, heat the tortillas in the microwave for 30 seconds. Arrange the filling. Finish by piling the avocado and coriander over each taco.

Spicy Veg Omelette (v)

Ingredients
4 eggs
1 red onion, finely sliced (or a garlic clove, finely chopped)
1 green pepper, very finely sliced
1 tsp of curry powder, garam masala or cumin
Coriander or mint, to taste
A handful of cooked prawns (optional)
Method
Step 1

In an omelette or frying pan, add a little oil and sauté the onion for a few minutes with the green pepper. Add the curry powder or garam masala.

Step 2

Whisk the eggs in a bowl. Season with salt and pepper and ladle the mix into the pan. Swirl around the surface so the omelette garners evenly distributed heat. Let it cook underneath. After a few minutes, flip it over. Scatter with fresh mint or coriander to serve.

Chickpea Fritters (V)

2 tins of chickpeas, drained
1 onion
1 garlic clove
1 tsp of ground cumin
1 tsp of ground paprika
1 tsp of salt
50g of flour
1 tsp of baking powder
Plain yoghurt and rocket, to serve
Method
Step 1

In a food processor, blitz all the veg elements briefly so you have a crumbly texture.

Step 2

Turn into a bowl and mix everything else in. Season with salt and pepper to your taste.

Step 3

Divide into golf ball shapes, flatten, fry in a hot pan with approx. 1cm of oil. After a few minutes, flip the patties over. Serve with a salad.
