Melon Salad With Ham & Basil

In the middle of a heatwave, when standing over a hot hob or oven doesn't bear thinking about, few things are as simple or refreshing as this classic combination. Serve it with a cold glass of white wine or rosé to really bring out the flavours.

1 large ripe Charentais or cantaloupe melon
2 shallots
8-12 thin slices of raw ham (e.g. jambon de Bayonne)
2 tbsp of sherry vinegar
1 tbsp of balsamic vinegar
6 tbsp of finest olive oil
Purple & green basil leaves
Sea salt & freshly ground black pepper
1 baguette
Method
Step 1

Halve the melon, remove the seeds, cut into thin slices and peel. Peel the shallots and cut into very fine slices. Arrange the melon slices and ham on four plates, and top with the sliced shallots.

Step 2

For the vinaigrette, mix both vinegars with a little sea salt and pepper, then stir in the oil. Drizzle the melon slices and ham with the vinaigrette, and sprinkle with the basil leaves. Serve with slices of baguette.
