Fried Halloumi With Cucumber Salad

Fried Halloumi With Cucumber Salad

This is one of those 'no-recipe' recipes: fried halloumi, the firm Greek cheese with a high melting point, with a cucumber salad. It couldn't be easier to make but you’ll need enough for at least a thick plank per person.

Total Time
15 Minutes
Ingredients
Half a cucumber, diced
1-2 tomatoes, chopped
Olive oil
A handful of parsley
A handful of mint
1 lemon
Bread or pita
1 packet of halloumi
Method
Step 1

Combine the diced cucumber and a ripe, chopped tomato or two, a lot of olive oil and pepper, and some parsley and mint. Taste and add some salt, but not too much because the cheese will be salty.

Step 2

Then, cut a lemon into wedges to serve on the side, and put some crusty bread or pitas wrapped in foil in a low oven to warm.

Step 3

Meanwhile, cut the cheese into finger-thick slices or sticks. Heat a well-seasoned or nonstick pan, well swirled with olive oil, until it is nearly about to smoke. Add the halloumi and cook, turning the pieces a few times, until they are golden brown on all sides.

Step 4

Call your people to the table. Everyone gets a slice or two of cheese and a healthy pile of salad. Pass the lemon around and serve the bread on the side.
