Spinach and Turkey Meatballs with Gnocchi

This one-pot dinner finished in the oven is the perfect family recipe for everyone to eat together. It's also a great way to get the kids to enjoy two of their five-a-day.

Ingredients
30ml of olive oil
1 onion, diced
2 garlic cloves, chopped
50g of spinach, chopped
500g of turkey mince
500g of passata
400g of diced frozen mixed vegetables
1 tbsp of dried oregano
2 tbsp of tomato purée
500g of gnocchi
10g of fresh parsley, chopped
Method
Step 1

Fry the diced onion for a few minutes before adding the garlic.

Step 2

While the onions are cooking, make the meatballs by combining the chopped spinach with turkey mince.

Step 3

Once the onions and garlic have softened, add the frozen vegetables, passata, 150ml water. Season with salt, pepper and oregano.

Step 4

Stir in the gnocchi and leave on a low heat.

Step 5

Now, start rolling ping-pong ball sized meatballs and dot them into the pan. Once done, drizzle a little olive oil over the top.

Step 6

Bring the pan to a simmer then transfer the pan to a pre-heated oven for 10 minutes, or until the meatballs are cooked through.

Step 7

Once cooked, remove from the oven, garnish with chopped parsley and serve.
