30ml of olive oil
1 onion, diced
2 garlic cloves, chopped
50g of spinach, chopped
500g of turkey mince
500g of passata
400g of diced frozen mixed vegetables
1 tbsp of dried oregano
2 tbsp of tomato purée
500g of gnocchi
10g of fresh parsley, chopped
Step 1Fry the diced onion for a few minutes before adding the garlic.
Step 2While the onions are cooking, make the meatballs by combining the chopped spinach with turkey mince.
Step 3Once the onions and garlic have softened, add the frozen vegetables, passata, 150ml water. Season with salt, pepper and oregano.
Step 4Stir in the gnocchi and leave on a low heat.
Step 5Now, start rolling ping-pong ball sized meatballs and dot them into the pan. Once done, drizzle a little olive oil over the top.
Step 6Bring the pan to a simmer then transfer the pan to a pre-heated oven for 10 minutes, or until the meatballs are cooked through.
Step 7Once cooked, remove from the oven, garnish with chopped parsley and serve.
