Chicken Katsu

Ingredients
Palm size chicken breast
50g of bulgar wheat (dry weight)
Katsu Curry Sauce
½ tsp of fresh ginger
1 tsp of coconut oil
½ a red onion finely chopped
1 clove of garlic, crushed
½ tsp of garam masala
½ tsp of mild curry powder
1 heaped tsp of Greek yogurt
100ml of water
Method
Step 1

Either bake or grill your chicken breast on a medium heat for approximately 20 minutes turning over half way through.

Step 3

Meanwhile in a small pan fry the ginger, garlic and onion in the coconut oil on a low heat for five minutes. Add the garam masala and curry powder and stir.

Step 4

Now add the 100ml of water, stir and bring to the boil. Add the squeeze of lemon juice then add the Greek yogurt. Transfer mix to a blender and blitz sauce for one minute. Put the chicken and bulgar wheat on a plate and pour sauce over the chicken.
