Ingredients
4 tbsp tamari
2 inch piece of ginger, grated
2 tbsp rice wine vinegar
2 small cloves of garlic (or one large clove), finely grated
½ tbsp maple syrup
Method
Step 1
Place everything into a jam jar and shake really well. If you like spice then you can add chilli flakes or fresh chilli.
Step 2
Coat tofu, salmon or chicken in the marinade and leave in the mixture, covered in the fridge, for at least 30 minutes before cooking.
