Against this stunning backdrop, the celebrations on Sunday 8th November include Diwali darshan, Sharda Pujan and food stalls, followed by a fireworks display at nearby Gibbons Recreation Ground. The mandir will also host Annakut darshan on Tuesday 10th November, when a spectacular offering of vegetarian dishes is presented as part of the Hindu New Year celebrations.

THE COOKBOOK & RECIPE

Spirit & Spice By Vivek Singh

Marking 25 years of The Cinnamon Collection, Vivek Singh's seventh book Spirit & Spice combines recipes with stories from his long career and the people, places and ideas that have shaped his restaurants. Part cookbook, part memoir, it features more than 69 signature recipes, many appearing in print for the first time, alongside photography by Jean Cazals. Singh reflects on the journey from opening The Cinnamon Club in the former Westminster Library in 2001 to building one of Britain's best-known modern Indian restaurant groups. If you're hosting at home this Diwali, give the dessert course a twist with this gulab jamun crème brûlée. It brings together two puddings that don't immediately seem like natural bedfellows: syrup-soaked Indian sweets and the crisp, caramelised top of a classic French brûlée.

Gulab jamun crème brûlée

Serves: 12

INGREDIENTS

For the brûlée:

  • 750ml of double cream
  • 300ml of passion fruit purée, fresh or frozen
  • 200g of granulated sugar
  • 6 egg yolks
  • 2 whole eggs
  • 36 small gulab jamuns, drained of syrup
  • 60g of demerara sugar

For the sablé:

  • 80g of butter
  • 80g of caster sugar
  • 2 egg yolks
  • 115g of plain flour
  • A tiny pinch of sea salt
  • 1 tsp of black sesame seeds
  • 1 tsp of baking powder

METHOD

  1. Make the custard. Combine the cream, passion fruit purée and granulated sugar in a saucepan and bring to the boil. In a separate bowl, whisk the egg yolks and whole eggs. Slowly pour in the hot cream mixture, whisking continuously until combined.
  2. Prepare the brûlées. Place three drained gulab jamuns in each of 12 brûlée moulds. Pour in the custard until each mould is around three-quarters full, leaving some of the sweets visible. Bake in a water bath at 100°C for 28-30 minutes, until set but still slightly wobbly in the centre. Leave to cool.
  3. Make the sablé. Mix the flour, salt and baking powder. In another bowl, beat the egg yolks until light and creamy. Cream the butter and caster sugar until fluffy, then mix in the yolks. Fold in the dry ingredients without overworking the dough. Freeze for at least four to five hours.
  4. Bake the biscuits. Roll the frozen dough to around 2mm thick and cut into rounds approximately 1cm smaller than the brûlée moulds. Sprinkle with black sesame seeds and bake at 160°C for about 10 minutes, until cooked through.
  5. Finish and serve. Sprinkle the demerara sugar over each cooled brûlée and caramelise with a kitchen blowtorch. Top with a sesame sablé and serve.
