THE RESTAURANT:

Calluna at Saltmoore, Yorkshire

Calluna is the new fine-dining restaurant at Saltmoore, the coastal retreat between the North Sea and the North York Moors. Led by executive chef Adam Maddock, previously of The Fife Arms, it celebrates North Yorkshire’s seasonal produce, producers and landscapes through an inventive tasting menu. The experience begins with a welcome drink in the Lounge Bar before guests move to the Kitchen Counter for the first two courses, offering a close-up view of the kitchen in action. The menu reflects the region’s ingredients and stories, from crab caught by the sous chef’s grandfather to mutton doughnuts with pickled bilberry and venison smoked over bell heather, served with black apple, celeriac and preserved elderberry. With just 24 covers per evening, Calluna offers an intimate, carefully paced experience. Saltmoore itself holds two Michelin Keys, making it a compelling destination for a food-focused escape.

THE HOTEL:

Loch Lomond Arms, Scotland

In the conservation village of Luss on the shores of Loch Lomond, the 17th-century Loch Lomond Arms has reopened following a transformation by Russell Sage Studio. Part of the 45,000-acre Luss Estates, the historic coaching inn draws on the Colquhoun family’s more than 800-year connection to the area, with the redesign bringing local heritage and the surrounding landscape into the interiors. It’s well placed for an outdoors-focused escape, with opportunities to hike Beinn Dubh or Ben Lomond, explore the loch by boat or take a bracing wild swim. For a more leisurely way to see the estate, guests can arrange 4x4 tours and pre-prepared picnics in scenic hillside locations. Back at the inn, fireside rooms and a dram of whisky set the tone for a cosy evening, while The Stag and Two Hounds serves Scottish classics with a focus on local produce.

THE JOURNEY:

British Pullman, Kent

For a festive outing with a difference, Belmond’s British Pullman train offers a Christmas lunch experience aboard its beautifully restored vintage carriages – some of which have been designed by film director Wes Anderson. This year, the Belmond train will be dressed for the occasion, creating a suitably nostalgic setting for a journey through the British countryside. Guests can settle into the train’s elegant interiors and enjoy a celebratory meal with all the festive trimmings as winter landscapes pass by.

THE GLAMPING ESCAPE:

Swinton Bivouac, Yorkshire

Swinton Bivouac is an off-grid retreat on the edge of the moorland at Swinton Estate in the Yorkshire Dales. Accommodation ranges from secluded Tree Lodges to Meadow Yurts and Cabin Yurts, with the treehouses particularly appealing thanks to their wood-burning stoves, private outdoor hot tubs and access to a woodland sauna. Walking and cycling trails start nearby, while the atmospheric Druid’s Temple is a short stroll away. After a day outdoors, the Bivouac Café serves coffee, cake and winter-warming food. The retreat sits within the wider 20,000-acre Swinton Estate, where guests can also book stays at Swinton Park Hotel, self-catering cottages, destination dining at chef’s table by Jamie Keeble and wellness experiences at the Country Club.

THE PRIVATE HOLIDAY HOME:

Forest House at Lime Wood, Hampshire

Lime Wood has introduced Forest House, a five-bedroom private residence within the hotel grounds on the edge of the New Forest. Sleeping up to ten guests, it combines the privacy of a country home with access to the hotel’s facilities, including the Herb House Spa and HH&Co, the restaurant headed up by chefs Angela Hartnett and Luke Holder (who can also cook in the house itself). British interior designer Susie Atkinson has created a warm, lived-in feel, with panelled walls, locally sourced antiques, patterned fabrics and four-poster beds. A boot room stocked with Hunter wellies makes it easy to head straight out for muddy forest walks, while a reclaimed bar and dedicated dining room set the scene for relaxed evenings together. Guests can also arrange forest-focused experiences, from guided foraging walks with resident forager Sammie Longhorn to private, mindful forest-bathing sessions in the surrounding woodland.

THE PUB:

Fylingdales Inn, Yorkshire

North Yorkshire’s much-loved Fylingdales Inn has reopened following an extensive refurbishment, with new-generation owners Henry Tucker and his partner Hannah giving the family-owned pub a fresh chapter while retaining its village roots. Henry grew up above the pub, and the project reflects his commitment to his father’s legacy. Interiors by Rachael Gowdridge balance original features, including stone columns and glazed doors, with quarry tiles, antique Kilim rugs and vintage artwork. A new Garden Room replaces the former conservatories, while a snug with a reclaimed stone fireplace offers a cosier spot for dinner or drinks. In the kitchen, head chef George Husband – who grew up in Robin Hood’s Bay and had his first job at the pub – brings experience from Brat and Bistro Union to a menu of modern small plates and reworked pub classics, celebrating British produce and local Yorkshire suppliers.

THE ATTRACTION:

Royal Botanic Garden, Edinburgh

The Royal Botanic Garden Edinburgh’s historic Palm Houses has reopened following a major restoration – the most ambitious in the garden’s 356-year history. The work included replacing all 5,750 panes of glass, restoring or updating 600sq m of ironwork and repairing 500 sq m of sandstone. The buildings now provide a protected home for almost 600 tender plant specimens from Scotland’s National Botanic Living Collection, which spans 13,500 species from 152 countries. A new visitor experience uses multimedia and multisensory digital tours to bring the plants’ stories to life.

THE REFURBISHMENT:

Ansty Hall, Warwickshire

Ansty Hall, the Grade II-listed 17th-century country house in Warwickshire, has completed the first phase of a major refurbishment in partnership with Russell Sage Studio and Travilion Interiors. Since acquiring the property in 2023, Exclusive Collection has been restoring the historic building, with the latest update covering the ground floor and seven manor house bedrooms. The design draws on Coventry’s heritage and notable local figures, weaving regional stories into the interiors through bespoke furnishings, richly layered fabrics and handcrafted details. Rather than simply refreshing a traditional country-house hotel, the project gives individual rooms a sense of identity, with each space reflecting a different part of the area’s history.

THE EVENT:

Fire Night at The Newt, Somerset

As autumn gives way to winter, The Newt in Somerset marks the apple harvest with Fire Night, an after-dark gathering rooted in local folklore. Set among the estate’s orchards, the event celebrates the changing season with a striking ritual: the estate’s master weaver, Stefan Jennings, ceremonially burns a willow effigy to ward off winter. Afterwards, guests can enjoy live music and flowing cider across the estate. Combining a sense of place with a centuries-old seasonal tradition, Fire Night offers a different way to experience The Newt beyond its gardens and orchards by day. Overnight guests can choose from newcomer Yarlington Lodge, manor house Hadspen and the more modern Farmyard.
